This rustic dish can be found throughout Chile and is definitely one of this countries most beloved staples, it’s their national dish.
This recipe is filled with great for you ingredients: chicken, fresh corn, sweet potato (or pumpkin) potatoes, peas, bell pepper and onions. You simply brown the chicken then boil it in a veggie broth with the vegetables. The result is great tasting comfort food. Serve with plenty of rice to soak up all the delicious flavors.
