I’m so excited to announce that I’ll be on an EPIC European alpine ski adventure at the end of the month. I’ll be heading back to the Swiss Alps and to Austria too! It’s going to be 3 weeks of on & off piste skiing, fine hotels and lots of food! One of the popular rustic mountain dishes that I’ve come to love is this Swiss Alpine Macaroni (Aelplermagronen) It’s mac ‘n cheese all grown up. If you crave stick to your ribs winter comfort food then this dish is for you. My daughter says this is her favorite pasta ever! (That means a lot around here!)
So what’s in Alpine Macaroni anyways? Pasta (I prefer ziti noodles to macaroni) Gruyère cheese, potatoes, bacon and caramelized onions. This dish is served with a side of applesauce. Don’t skip that part. It’s the sweet & salty combo that really sets this recipe apart from anything else you’ve ever eaten! Wine lovers, serve this with a dry Riesling or Chardonnay. When in Switzerland a Swiss table wine pairs perfectly. This pasta has many names, another is Herdsman’s Macaroni.

This is a hearty and I’m sure comforting meal, I can see why it would be a favorite. We travel to Austria often and I’m sure you will love it.
