The Peaks Resort is one of my favorite places to hang out in Telluride, Colorado. We used to vacation there when my kids were smaller. These days it’s where we swim, spa and workout.
Recently I was able to enjoy a wonderful dining experience at their signature restaurant, Palmyra. For a more detailed restaurant experience please visit my collaboration at Telluride Inside & Out.

Chef Patrick Funk is a super enthusiastic executive chef who brought it to us big time.
The clean design of the restaurant makes easy to take in the breathtaking views of the golf course & mountains.
Ingredients at Palmyra are locally sourced when available & full of big, rustic, comfort food flavors.
We learned a lot about those from food and beverage manager/sommelier, Nathan Kaiser.
Above is the “Pandora” style Beef Burger with pepper jack cheese, and avocado. Let’s not forget the pickled jalapeño pico de gallo.
With lots of fries (because a gal can indulge in fries when she skis bumps all day.)
I said lots of French Fries. These with a little bit of seasoning…
There are delicious menu choices for lunch, aprés ski and magnificent dinners.
Here is what we were lucky to taste…Cocktails first, of course!
Isn’t that Manhattan beautiful! Palmyra calls this libation the Leather Armchair. Such a fun name for a grown up drink.
We also had a gingery & refreshing Telluride Mule…
Then this stunning Cobb Salad was brought to the table. I adore the artistry in cobb salads ~ both in the flavors and presentation.
The Avocado Herb Dressing is a new favorite!
We then tasted two burgers.
The “Palmyra” shown above and this “Peaks” Lamb Burger with Bib Lettuce, Roasted Tomato, Shaved Onion, melted White Cheddar & creamy Garlic Aioli.
Crispy Pork Shanks. ohhhhhhhh.
Served over a bed of buttery, cheddar grits & plenty of finger licking great Golden BBQ Sauce.
Squash “Pasta”
We were sure to indulge in this vegetarian dish which can easily be made vegan without the parmesan cheese.
Then we embraced these stunning desserts with all of our sweet teeth!
Goat Cheese & Honey Thyme Cheesecake
S’mores Donuts
Fried Flaky Donuts are served with Cocoa Nib Gelato, Flamed Coconut Marshmallows & Chocolate Ganache. Yep!
