Hi there! Ok, you don’t need to tell me these aren’t my prettiest food photos. I all ready know that. I needed to get this PB&J Enchilada French Toast on the  breakfast table asap. That was right after I took a really excited bite. Please get over the not so fanciful presentation & try these immediately, you’ll be glad you did… What makes this breakfast/brunch/snack so fabulous? Easy. Take a whole wheat tortilla, spread on some peanut butter & jelly. Roll it up. Dip in whisked egg. Fry up in butter. Really, nothing is better. Not to mention this is protein & energy packed. Enjoy any time of the day & serve with eggs for a little something more. We pack these for lunchbox snacks too! We do PBJ quesadillas for my kids with Corn tortillas so that they are GF- kids love them!!

When I saw this title I was like “what the heck is a PB+J Enchilada?”. I’m glad to see that you didn’t put enchilada sauce on a PB+J sandwich. That would probably be weird. But THESE sound delicious! I’m totally down!

This is just a healthy yummy and easy breakfast item to make. I always use whole wheat tortillas and making these are filling. Thanks for the idea!!
