Well, well. No.1 tells us a lot. We love cocktails, Bailey’s & popsicles! Not sure where the brilliant invention of poptails started, but they are here to stay. Thank goodness! Look forward to many new ones here in 2015.
2. Spicy Sriracha Shrimp & Quinoa Bowl
Mention the word sriracha and you will likely draw a hungry crowd. This spicy Asian sauce took over our taste buds years ago & it’s here to stay! Thank goodness, ’cause it’s dang good. Quinoa is a fabulous gluten free seed that double as a grain these days. I cook with it as often as a I can.

4. Chicken Enchilada Quinoa Casserole
Most of us are on the quest to prepare big batch, healthy + delicious family meals. This is a gluten free riff on traditional enchiladas. Made with quinoa, lots of cheese & ground beef. Top with fresh avocado. Best part….lots of leftovers & your kids will LOVE it!
This recipe proves that simple basics are well loved. Taking a few extra minutes to whip up homemade salad dressing is well worth it. Really all you need to do is add all the measured ingredients into a jar, pop on the lid & shake. This dressing can be used on salads or as a marinade.
6. Grilled Thai Spice Chicken Sliders
Each & every bite of these sliders is memorable & guess what? There’s sriracha in this sauce too. As discussed in #1 you guys (and I) love the stuff.
As much as we all like to indulge we love the high energy, healthy stuff too. The green smoothie recipe really is the best I’ve had. Its got lots of essential nutrients & sweetness from frozen bananas to satisfy the pickiest of veg eaters.
8. Loaded Scalloped Sweet Potato Casserole
I’m so happy to see that y’all love sweet potatoes as much as I do! This baked casserole is filled with all sorts of goodness & will keep your belly full until your next meal. Bacon make everything better always…and this has a bunch of it!
9. Veggie & Quinoa Lunchbox Power Salad
This salad is as pretty to look at as it is delicious to eat. Quinoa is a superfood that we all can’t get enough of. Enjoy this quick + simple recipe at home or pack it up for work & school. It travels perfectly!
10. Sparkling Sea Breeze Cocktail
Not one but two boozy creations made the list this year! I can’t begin to tell you how much fun it is to create new libations. I love dreaming them up, photographing them….and of course, the grand tasting! This cocktail is perfect sips any time of the year.
