Recipe: Campfire Loaded Veggie Nachos

Ingredients

1 15 oz can whole kernel corn, drained
1 15 oz can pinto beans, drained and rinsed
1 10 ounce can Rotel, drained
½ large red onion, diced & divided
1 2 ounce can sliced black olives, drained
1 tsp Tajín Clásico mexican spice blend
½ tsp freshly ground black pepper
½ tsp cumin
1 16 ounce bag tortilla chips
1 8 ounce package shredded Mexican blend cheese
1 ripe avocado
¼ cup chopped fresh cilantro
lime slices
sliced jalapeños

Directions

Line a 10 inch cast iron skillet with foil.
Combine the corn, beans, 1/2 of the onions, Rotel, olives, Tajín Clásico, pepper and cumin in a large bowl.

Place 1/2 of the chips in the skillet, top with 1/2 of the cheese and 1/2 of the corn mixture. Repeat with another layer of chips, corn mixture and cheese.

Campfire or Grilled Nachos

If you are heating over the campfire; tent with foil and grill until the cheese melts 8-10 minutes. Remove from the fire, carefully remove foil. Top with avocado, the rest of the onions, cilantro, lime wedges, jalapeños and drizzle Chipotle Cream Sauce.
If using the grill, heat over medium high heat and follow the rest of the directions. Serve immediately.

Baked Nachos

Heat oven to 400 degrees Fahrenheit with rack in the middle. Place the skillet in the oven, tent with foil and bake for 8-10 minutes until cheese is melted. Remove from the oven, carefully remove foil. Top with avocado, the rest of the onions, cilantro, lime wedges, jalapeños and drizzle Chipotle Cream Sauce. Serve immediately.

Recipe: Vegetarian Enchiladas

Ingredients

2 tbsp olive oil
1 cup chopped red onion
2 cloves garlic, chopped
1 crown of broccoli, chopped into small pieces
1 yellow or orange bell pepper, chopped into small pieces
½ tsp smoked paprika
1 lime, juiced
5 cups baby spinach
1 (15 ounce) can black or pinto beans, drained and rinsed
2 cups mexican blend shredded cheese, divided into 1/2 and 1 1/2
½ tsp salt
freshly ground black pepper
8″ whole wheat tortillas
freshly chopped cilantro for garnish

Directions

Make the enchilada sauce.

Preheat the oven to 400˚ Fahrenheit with the rack in the middle. Spray a 9X13″ casserole dish with olive oil.

In a 12 inch skillet, heat the olive oil over medium heat. Once it’s hot add the chopped onion. Cook until fragrant about 5 minutes. Add the garlic, salt and pepper. Cook 2 minutes. Add the broccoli, cook 5 minutes or until the broccoli is bright green. Mix in the bell pepper, smoked paprika and lime juice. Mix in the baby spinach, allow it to wilt about 2 minutes. Mix in beans. Cook another 2 minutes. Mix in 1/2 cup of the shredded cheese.

Assemble the enchiladas. Pour 1/4 cup enchilada sauce into the casserole dish and spread it around. Top each tortilla with some of the veggie mixture. Lay it down the center of the tortilla and roll the sides up over it. Place each stuffed tortilla with the seam side down into the casserole dish until you have used up all the veggies. You will end up with 8 or 9 enchiladas.

Top with the remainder of the enchilada sauce. Pour the sauce down the middle of the enchiladas keeping the edges bare. Top with the remainder of the cheese. Bake for 20 minutes. Sprinkle with freshly chopped cilantro and serve immediately.

One-Pot Creamy Broccoli Pasta

Ingredients

12 oz spaghetti or linguinie
½ cup chopped red onion
3 cloves garlic, chopped
1 tbsp olive oil
1 tbsp fresh lemon juice
2 cups bite sized pieces broccoli florets
2 cups vegetable broth
1 ¼ cups whole milk
1 cup shredded cheddar cheese
Kosher salt to taste
ground black pepper to taste
Toppings
chopped fresh Italian parsley
sliced green onion

Directions

Heat the oil over medium heat in a 12 inch cast iron cast iron skillet.

Sauté the onion for 5 minutes, until soft and fragrant. Add the garlic. Cook 2 minutes. Mix in the lemon juice.

Add the broth, milk and broccoli. Bring to a boil. Add the pasta making sure it’s all submerged in the cooking liquid.

Cover the skillet and simmer the pasta for 8 minutes. Remove the lid, stir and continue to cook 8-10 minutes or until the pasta is done to your liking. Mix in the cheddar cheese in the last two minutes of cooking. Season with salt and pepper to taste.

Top with parsley and green onion. Serve immediately.

Recipe: Quick & Easy Spaghetti and Meatballs

Ingredients

1 lb spaghetti or any pasta
1 lb ground beef
½ tsp garlic powder
½ tsp onion powder
½ tsp ground black pepper
½ tsp Kosher salt
2 tsp dried basil
24 fl oz (1 jar) canned tomato sauce
grated or shaved parmesan cheese for topping

Directions

Preheat the oven to 375 degrees F.
Line a baking tray with tin foil.

Place the ground beef in a large bowl.
Season with the garlic powder, onion powder, black pepper salt and basil. With clean hands combine well.

Roll into 1 inch meatballs. Place the meatballs onto the lined baking sheet. Bake for 20 minutes.

While the meatballs are baking, cook the pasta to package directions.
Drain the pasta when it’s done cooking.

Heat the sauce in a skillet. Season to taste with the garlic powder, onion powder etc. if you want it to have more profound flavors.

Top the cooked pasta with the sauce, meatballs and some Parmesan cheese.

Chili Cheese Oven Fries

Ingredients

Oven French Fries
1 ½ lbs Russet potatoes
¼ cup canola or vegetable oil
½ tsp salt
½ tsp ground black pepper
Chili
1 lb ground beef
1 tbsp tbsp olive oil
1 medium yellow onion diced
1 green bell pepper finely chopped
1 tbsp chili powder
1 tsp cumin
½ tsp coriander
1 tsp salt
1 tsp pepper
1 cup crushed tomatoes
½ cup water
Toppings
1 tomato seeded and diced
Shredded cheddar and mozzarella cheese
green onions chopped
sour cream
Anything else you may want such as sliced Jalapeno, salsa, pico de gallo, avocado, guacamole, olives, lettuce, etc.

Directions

Oven Fries

Clean and pat dry the potatoes. Do not remove the skin.

Slice into desired thickness.

Preheat the oven to 450 degrees F with the rack on the lower level.

In a large bowl toss the potatoes with the oil, salt and pepper and any other toppings you like.

Place on the baking sheet in a single layer.

Bake for 25-35 minutes tossing the fries in the middle of baking time.

Chili

While the fries are baking prepare the chili. Cook the meat in a 12 inch cast iron skillet until browned, breaking up the meat up as it cooks. Remove the meat from the skillet with a slotted spoon. Discard oil.

Heat olive oil over medium heat in a the same skillet, no need to wash it. Saute the onion for 5-6 minutes until softened and fragrant.

Add the bell pepper and cook a few more minutes.

Add the rest of the ingredients, bring to a boil and then to a simmer for 20 minutes or until chili thickens.

Plate the fries in a bake safe casserole dish or single serving dishes. Top with chili and handfuls of cheese. Bake for 2-3 minutes until the cheese is melted. Serve hot with various toppings.

Recipe: Creamy Stovetop Mac and Cheese with Crispy Prosciutto

Do you love mac and cheese? Well then this Creamy Stovetop Mac and Cheese with Crispy Prosciutto will become your go-to recipe!

4-6 servings

1 pound macaroni, Cavatappi or shells pasta
4 tbsp unsalted butter
1/4 cup unbleached all-purpose flour
1 1/2 cups whole milk
1 cup half and half
2 cups grated cheddar cheese (about 8 ounces)
1 cup grated Monterey Jack cheese (about 4 ounces)
1 tsp Dijon mustard
1/4 tsp smoked paprika
4 ounces cream cheese spread
freshly ground black pepper & salt to taste

Cook pasta to package directions.
While the pasta is cooking: Chop the prosciutto into bite sized pieces. Heat a 10 inch cast iron skillet over medium-high heat. Cook for 7-8 minutes until the prosciutto is crispy. Stir often and watch carefully so it doesn’t burn. Remove from skillet and set aside.
For the cheese sauce: Melt the butter in a large saucepan over medium-high heat. When it begins to foam slowly add in the flour. Whisk until it becomes like a paste, about one minute. Whisk in the milk and half and half, bring this to a low simmer. Continue to until the mixture thickens about 5 minutes.
Add in the cheeses a handful at a time, mixing in each addition until melted and creamy. Mix in the mustard and smoked paprika. Fold in the cream cheese until everything is well combined. Season to taste with salt and pepper.
Mix in the cooked pasta. Plate the pasta in individual bowls or a serving dish and top with the crispy prosciutto. Serve warm.

Recipe: Barley Salad with Roasted Brussels Sprouts, Cranberries & Feta

1 cup uncooked pearl barley
3 cups water
1/4 tsp salt
1 tbsp olive oil
–brussels sprouts
1 lb brussels sprouts, rinsed and pat dry
3 cloves garlic, chopped
3 tbsp olive oil
1/2 tsp salt
1/2 tsp ground black pepper
–mix ins
1/2 tsp smoked paprika
1/2 cup dried cranberries
1/2 cup crumbled feta cheese
1 tbsp freshly squeezed lemon juice

Preheat the oven to 375˚ Fahrenheit with the rack in the middle.
Toast the barley in a medium saucepan over medium heat for about 5 minutes, stirring often until fragrant. Add the water slowly and stir in the salt. Bring to a boil, cover and simmer for 50-60 minutes. At the 20 minute mark, check the barley to see if additional water is needed. Remove the barley from the heat and transfer for a large serving bowl. Toss with one tablespoon olive oil.
While the barley is cooking, roast the brussels sprouts. Trim off the tough end of the brussels sprouts. Cut them in 1/2 or quarter them, depending on how big they are. Toss them with the olive oil, garlic, salt and pepper. Place on a baking sheet in a single layer and bake for 20-25 minutes. Toss with a pair of tongs half way through cooking time.
Add the brussels sprouts to the barley and toss. Mix in the smoked paprika, cranberries, feta cheese and lemon juice. Season to taste with more salt and pepper if desired. Serve warm or cold.

Recipe: Baked Brie with Cranberry Sauce

There’s no reason why Thanksgiving recipes need to be complicated. Try this quick and easy appetizer: Baked Brie with Cranberry Sauce

6 servings

1 round (8 ounces) Brie cheese
1/2 cup homemade cranberry sauce (see notes for some recipe ideas)
top with toasted chopped pecans, walnuts or candied nuts (see notes)
your favorite crackers

Heat oven to 325 degrees F with the rack in the middle.
Place the cheese on a cookie sheet or bake safe tray. Bake 10-15 minutes or until the cheese has softened.
Spoon the cranberry sauce over the cheese, Bake for 5 minutes longer until the cranberry sauce is warmed through. Top with toasted or candied pecans.
Serve with crackers.

Recipe: Cheddar Cheese Dinner Rolls

We love this Cheddar Cheese Dinner Rolls recipe, great for the holidays! Bet you can’t eat just one! They bake up perfectly every time.

24 dinner rolls

1 1/2 cups milk
1 stick unsalted butter, cut into pieces, plus more for brushing
1/4 cup granulated sugar
1 (1/4 ounce) packet active dry yeast
1/2 cup warm water
3 large eggs, lightly beaten
1 1/2 cups shredded cheddar cheese
1 1/2 tsp salt
6 cups unbleached all-purpose flour
flake salt for topping

In a small sauce pan, bring the milk to a simmer over medium-high heat. Remove from the heat, stir in the butter and sugar. Let cool.
Dissolve the yeast in the warm water. Let that sit until foamy, about 5 minutes.
In a mixer fitted with the dough hook, add the milk mixture, eggs, yeast mixture, cheese, salt and 3 cups of the flour. Mix until smooth. Add the remaining 3 cups of flour, 1/2 cup at a time. Mix until a smooth ball of dough forms.
Transfer the dough to a lightly floured surface and knead for about 5 minutes. Butter or oil a large bowl, add the dough. Cover and let it rise in a warm place for 60-70 minutes, until doubled in size.
Place the dough on a lightly floured surface and punch it down. Cut into 24 two inch pieces. Roll into balls. Place the dough balls onto 2 parchment or silicone lined baking sheets. Cover and let rise for an additional 30-40 minutes.
While they are rising, preheat the oven to 350˚
Brush the risen rolls with some melted butter and top each with some flake salt. Bake for about 20 minutes or until golden brown. Remove from the oven and serve warm with softened butter.

Recipe: Spinach Ricotta Gnocchi

We love this easy and delicious Spinach Ricotta Gnocchi recipe. Top with melted butter and crispy shallots for a healthy anytime meal. Serve as a main course, appetizer or side dish.

4-6 servings

1 (10 ounce) package chopped frozen spinach
15 oz part-skim ricotta cheese
1 cup freshly grated Parmesan cheese
1/2 cup unbleached all purpose flour
2 large egg yolks
1/2 tsp salt
1/2 tsp ground black pepper
–topping
1/4 cup (1/2 stick) butter, melted
1 shallot, minced (about 1/2 cup)
shaved Parmesan
freshly chopped Italian parsley

Thaw the spinach and squeeze out any additional water.
In a large bowl combine the spinach and the ricotta cheese with a spatula.
Mix in the Parmesan, flour, egg yolks, salt and pepper until well combined.
Dust a baking sheet and work surface with flour. Roll 1/4 cup of the dough into a 5 inch long log. Cut into 1 inch pieces and form ovals with your fingers.
Transfer the gnocchi to the prepared baking sheet. Continue this process until you are done with all the dough.
Place some of the gnocchi into a large pot of boiling water. Cook until they rise to the surface and then for four minutes longer. Transfer each batch to a serving bowl with a slotted spoon.
Make the shallot butter sauce: melt the butter in a skillet over medium heat. When it’s bubbling add the shallots and cook until just golden brown about 8 minutes.
Pour the butter shallot sauce over the cooked gnocchi, top with shave parmesan, parsley and serve immediately.

Recipe: Lit’l Smokies Grilled Hot Dog Mac ‘n Cheese

We love this mac for busy weeknight meals, casual weekend entertaining and the lunchbox!

6-8 servings

1 package Hillshire Farm Lit’l Smokies (about 36 in the pack)
16 ounces macaroni, cooked to package directions
2 tablespoons canola or vegetable oil, divided
3 cups shredded cheese (cheddar & mozzarella combo is great!)
1 cup half and half
1/2 teaspoon garlic salt

Cook the macaroni, place in a large bowl, toss with 1 tablespoon of the oil & set aside.
Heat the other tablespoon of oil in a grill pan over medium high heat. Grill the hot dogs for about 5 minutes or until browned on each side. Remove them from the hot pan with tongs. Let cool a bit & slice the hot dogs into thirds.
Heat a large sauté pan over medium heat, add the cheese, half and half & garlic salt. Cook about 5 minutes stirring often until you have a well combined, creamy sauce.
Toss the macaroni with the cheese sauce. Fold in most of the hot dogs & place some on to top for serving.
