Uncle Sam cereal subs as a flour in this recipe as it is ground into a fine crumb and used together with my favorite oat flour.

1 1/4 cup (170 g) Oat Flour
1 cup (65 g) Uncle Sam Cereal, ground into a flour
1 teaspoon Baking Powder
1 teaspoon fine Sea Salt
1 teaspoon ground Cinnamon
2 large Eggs, whisked
2 very ripe Bananas (1 cup, 250 g) mashed
1/3 cup (80 ml) fat free, plain Greek Yogurt
1/4 cup (80 ml) unsweetened Vanilla Almond Milk
4 droppers full Vanilla Stevia Drops
2 tablespoons melted Coconut Oil, Butter or Ghee
2/3 cup (100 g) Raisins
2/3 cup (75 g) chopped nuts (I love Pecans and Walnuts)

Any dried fruit: cranberries, apricots, blueberries

Pre heat oven to 350 F with the rack in the middle. Prepare a muffin pan with muffin

liners. In a food processor or blender pulse Uncle Sam cereal until it forms a fine crumb/

flour. Whisk together dry ingredients in a bowl (excluding raisins and nuts) Combine the
4
wet ingredients. Make a batter, well combining the wet & dry ingredients. Fold in raisins
5
and nuts. Fill muffin pans with the batter and bake until a toothpick comes out crumb

free about 20 minutes.
