Chocolate Chip Cornbread Waffles

Waffles are one of our all time favorite breakfasts! Chocolate lovers, this one’s for you!

 1 cup corn flour
 1 cup white whole wheat flour or unbleached AP flour
 1/4 cup coconut or whole cane sugar
 1/2 cup unsalted butter, melted & cooled
 2 teaspoons baking powder
 1 teaspoon salt
 1 1/4 cup milk
 2 eggs
 1/2 cup mini chocolate chips
 vegetable oil

Pre heat your waffle maker. Brush oil on both sides. In a bowl whisk together the dry ingredients (not chocolate chips) In another bowl combine the eggs & milk. Combine wet & dry. Don't over mix. Fold in the chocolate chips. Place 3/4 cup batter in your waffle maker (or whatever the manufacturer recommends) Heat a few until waffles are slightly toasty & cooked through. They will easily release from your waffle maker when done. Serve with butter & maple syrup.

I use the CucinaPro Bubble Waffle Maker for this recipe. You can also use any waffle maker you might have.
