I’m so excited about this Goat Cheese Pear Salad with Pear Vinaigrette recipe! It pairs perfectly with my Tortellini with Creamy Pumpkin Sauce & so many other hearty dishes. Add some protein like turkey or chicken for a entree salad.
Yields 1 Serving Quarter (0.25 Servings) Half (0.5 Servings) Default (1 Serving) Double (2 Servings) Triple (3 Servings)
5 ounces baby greens
4 ounces chevre (goat cheese), crumbled
2 thinly sliced pears, dipped in lemon juice to prevent browning
1/2 cup toasted walnuts or Maple Roasted Pecans
Pear Vinaigrette
1/3 cup white wine vinegar
1/3 cup canola oil
1/3 cup pear nectar
1 teaspoon dijon-style mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 Plate the greens & top with goat cheese, pear slices & nuts. Season with some salt & pepper.
2 Place all vinaigrette dressing ingredients in a screw top jar and shake until well combined. Makes about 1 cup dressing,.
3 Drizzle salad with dressing & serve on the side.
