Prepare a simple syrup with 2 cups of the sugar & the water. Bring to a simmer in a saucepan, do not boil. Stir well to combine sugar & water. Remove syrup from heat & let cool to room temperature.
Add cranberries to the sugar syrup, make sure they are all submerged (I used a small plate on mine) Cover & refrigerate 8 hours to overnight.
Place a cooling rack or foil on a baking tray. With a slotted spoon transfer cranberries to the cooling rack to drain for one hour. Make sure they are in a single layer.
Add the 3/4 cup sugar to a bowl. Roll a small handful of cranberries at a time to coat well. Place them back on the cooling rack for one hour to dry.
Use to garnish all kinds of pretty desserts!
