Recipe: Key Lime Coconut Steel-Cut Oatmeal

 Key limes have a distinctive flavor and fragrance, they are also a bit less tart than regular limes. This makes them so wonderful to use in desserts and oatmeal. Please give this healthy, vegan recipe a whirl as soon as you can, I just know you will love it too!

 1 cup steel cut oats
 2 cups unsweetened almond milk
 2 cups light unsweetened coconut milk (from the can)
 1/2 teaspoon pure vanilla extract
 1/4 teaspoon salt
 1/4-1/3 cup pure maple syrup (depending on how sweet you like your oats)
 juice from 4 key limes
 top with coconut flake and lime zest

Bring the almond and coconut coconut milks to a boil. Reduce heat to low and add the steel cut oats. Bring to a simmer and cook for about 25 minutes, stirring frequently. Half way through cooking time add the vanilla, salt, maple syrup and key lime juice. The oats are done when they are chewy and soft.

Serve hot with coconut flake, key lime zest and extra maple syrup.
