 2 sweet potatoes (should yield 4 cups cubed)
 3 tbsp olive oil
 2 tbsp pure maple syrup
 1/4 tsp garlic salt
 1/4 tsp cinnamon
 1/4 tsp black pepper
 fresh parsley for topping

Pre-heat oven to 425 degrees fahrenheit.

Rinse, pat dry and chop the sweet potatoes into 1 inch cubes.

Place in a 12 inch cast iron skillet in a single layer. Toss with the oil, maple syrup, garlic salt, cinnamon and pepper.

Bake for 25 minutes, toss with tongs. Bake for another 10 minutes.

Remove from the oven, top with parsley & serve.
