These Raspberry Linzer Tart Bars are simple and quick to prepare. They are great for grab and go snacks, entertaining and tailgating parties!
Preheat oven to 350° with the rack in the middle. Grease a 13X9 baking pan.
In the bowl of a stand mixer, cream butter and sugar together until light and fluffy. Beat in egg until smooth. In another bowl, mix flour, ground almonds, cinnamon and salt. Add the flour mixture to the mixer in 3 additions. Beat until dough is well combined.
Press 2 cups dough onto bottom of the baking pan. Spread with the preserves to within 1/2 inch of the edges. Crumble remaining dough over preserves, covering the top well.
Bake until lightly browned, 35-40 minutes. Trim bars to the size you want them. Cool completely in pan on a wire rack.
