The weather has been gorgeous here in Telluride and with that we crave lots of cold fruit smoothies. My Strawberry Banana Smoothie is basic, but very tasty and memorable. Sure to become a favorite in your home too!
Banana Layer
1 frozen banana
3/4 cup unsweetened coconut milk (from the can)
juice from 1/2 meyer lemon
Strawberry Layer
3/4 cup frozen strawberries
3/4 cup unsweetened vanilla coconut milk
1-3 teaspoons pure maple syrup (or to taste)

Blend the banana layer ingredients in a high powered blender on the smoothie setting. Pour into a large glass. Blend the strawberry ingredients, sweeten to taste and pour over the banana layer.
