Recipe: Veggie Couscous Salad with Creamy Avocado Dressing

Couscous
 2 couscous, cooked to package directions
 3 green onions, chopped
 1 vine ripened tomato, seeds removed, diced
 1 red pepper, diced
 0.50 cup sun dried tomatoes in oil, diced
 0.33 cup crumbled feta cheese
 0.25 cup chopped cilantro
Avocado Salad Dressing
 1 ripe avocado
 0.25 cup olive oil
 2 tbsp white wine vinegar
 1 tsp ground black pepper
 1 tsp garlic powder
Couscous

Cook couscous and cool to room temperature. Toss with vegetables & feta cheese. Mix in the avocado dressing. Serve at room temperature or chilled.

Avocado Dressing

Add all ingredients in a blender or food processor. Blend until smooth and creamy.
