Sometimes simple is best when it comes to cooking and everything in life. My Rice with Peas recipe is just that…simple, but delicious all the same. It doesn’t need any bells and whistles, just basic tasty flavors. Serve as a side dish or as a simple main when you are craving something light. I like mine with a fresh side salad and that’s it. You can cook the rice in either vegetable broth if you want to keep things vegetarian or chicken broth if you like that better. Both choices are great!
