Earlier this week we talked about how roasted strawberries are the best thing ever. A lot of you guys dashed into the kitchen to make them as soon as you read my recipe for Citrus Roasted Strawberry Parfaits. You learned that by roasting strawberries they become even sweeter and the depth of flavor is amazing.

Now that we know how good this is, let’s make cookies! As always I’ll urge you to try these for breakfast. They are all natural, great for you ~ sugar free, grain free, gluten free. Best kinda breakfast, snack or dessert ever!!

These cookies are so simple to bake. Start with some juicy fresh strawberries…like these:

Roast the  heck out of those strawberries in a 375 degree oven for 30 minutes. You can stop right there and make parfaits, lick this fruity bliss off a spoon. Or make cookies…

Be sure to fill those cookies with lots of freshly whipped cream. You can do regular whipped cream or go for a vegan version made with coconut milk. If you are on the Paleo Diet you would want to that.

I am so in love with the idea of cookie sandwiches. Two of our favorites are Strawberry Whoopie Pies and Sunflower Seed Butter Oatmeal Sandwich Cookies.

  3. These cookie sandwiches are so pretty and cheerful – love the roasted strawberries. I’ve been playing around with coconut flour, so I’m glad to have found another recipe to try using it.

  4. Organic fresh strawberries are not in season here yet but I have a ton I picked from last summer in the freezer. I don’t suppose frozen strawberries will work, huh? I so want to make this recipe! Maybe I will try it anyway, worst case is they go into a smoothie. Thanks for amazing pictures!

    1. Sue, roasting veggies is my favorite way to prepare them. You are correct ~ doing that with the strawberries makes them that much sweeter & fuller of flavor. A total win!

  7. Can I substitute white whole wheat for the flours, and reg. or brown sugar for the stevia? Regular milk for coconut milk?
