It will more than make up for all those holiday indulgences… This Vegan Power Salad Bowl has a stunning combo of roasted sweet potatoes, quinoa, chickpeas, avocado & kale…all dressed with my Lemon Shallot Vinaigrette… Roasted sweets are one of my favorite foods ever. You can season them any way you like. Typically I use a combo of garlic salt, smoked paprika & black pepper. Another favorite is salt, maple syrup & cinnamon. Get creative with your seasonings! This salad is great for all the vegan, grain free & gluten free folks out there. A one size fits most kinda thing. Here’s the Lemon Shallot Vinaigrette… I must keep things brief today. Gotta dash out the door to Montrose, CO. It’s an hour and a half away from Telluride & worth the schlep for some of the larger stores. Things I can’t get here in my island-like ski town.
