Right before we left for our mountain getaway I gave my California ice cream maker a few great workouts. We enjoyed lots of Vegan Chocolate + Cherry Ice Cream and then I made this one.

We love all kinds of ice cream and enjoy plenty traditional cream filled versions too.

Lately though we crave ice cream made with thick and creamy full fat coconut milk.

A few mini chocolate chips make this extra fun too. They look like little watermelon seeds don’t you think? But much tastier of course!

I also have a recipe for Watermelon Frozen Yogurt Popsicles, just so you know. Those are great too ~ especially if you have one of those GIANT watermelons and you need more to do with it.

  1. I really need to invest in an ice cream maker. I’ve been making all of my frozen yogurt/ice cream by hand in a bowl, but it seems like I could make so many more flavors quicker with an ice cream maker. Loving this flavor combination!

  3. Hi Marla, Your ice cream looks amazing! Quick question, when you use the full fat coconut milk, does the ice cream get rock hard in the freezer? I’ve been playing around with healthy ice cream recipes and no matter what I make it once it freezes it turns out hard as a rock and takes for ever to soften up.

    1. Jennifer, great question! It certainly does not stay as soft as traditional ice cream. All that fat, air and sugar keeps the traditional stuff softer. My suggestion is to lay some wax paper or parchment over your coconut ice cream and store it in an airtight container. Take it out of the freezer quite a bit before you are going to serve it so it softens up. Hope it works out for you 🙂

  7. I made this and it turned out really funky tasting 🙁 I’m wondering if it was maybe from the stevia? I like stevia but haven’t used it TOO much. I don’t have the drops, I have the pure powder. I used about 1/16 teaspoon. Do you ever use the powder?
