Have you been enjoying watermelon this summer? We love this sweet, pink & juicy fruit. What could be happier than something naturally preppy pink & green that you can actually eat?
How about watermelon used in a delicious, good for you ice cream!
A few more things before we get started ~ this is vegan (dairy free) + sugar free too. Your bikini will love you…
Right before we left for our mountain getaway I gave my California ice cream maker a few great workouts. We enjoyed lots of Vegan Chocolate + Cherry Ice Cream and then I made this one.
We love all kinds of ice cream and enjoy plenty traditional cream filled versions too.
Lately though we crave ice cream made with thick and creamy full fat coconut milk.
As long as you like the flavor of coconut then you gotta try ice cream made with it. You also need to try coconut whipped cream…
A few mini chocolate chips make this extra fun too. They look like little watermelon seeds don’t you think? But much tastier of course!
I also have a recipe for Watermelon Frozen Yogurt Popsicles, just so you know. Those are great too ~ especially if you have one of those GIANT watermelons and you need more to do with it.
I think this would make the perfect poolside snack to share with your sweetie….
Just be sure all that summer fun in the sun doesn’t melt it too quick!
Do you ever make homemade ice cream? If so what are your favorite flavors?

I am in love with this ice cream!
Marla!!! Love this colorful vibrant post and delicious ice cream! You are amazing! Miss you girl! xoxo
I really need to invest in an ice cream maker. I’ve been making all of my frozen yogurt/ice cream by hand in a bowl, but it seems like I could make so many more flavors quicker with an ice cream maker. Loving this flavor combination!
Oh my goodness, what a refreshing summer treat this is!! Love it!!
A wonderful ice cream! I love the fact that you used coconut milk…
Cheers,
Rosa
Wow, I love the delicate color! Coconut ice cream is my favorite – I’m actually going to go make some vanilla coconut milk ice cream today 🙂 Love the watermelon in yours. What’s more refreshing than than watermelon? Especially in ice cream! Awesome! Thanks for the link love 🙂
I love homemade ice cream any time of year! One of my favorites is chocolate peanut butter. So decadent!
Hi Marla, Your ice cream looks amazing! Quick question, when you use the full fat coconut milk, does the ice cream get rock hard in the freezer? I’ve been playing around with healthy ice cream recipes and no matter what I make it once it freezes it turns out hard as a rock and takes for ever to soften up.
Jennifer, great question! It certainly does not stay as soft as traditional ice cream. All that fat, air and sugar keeps the traditional stuff softer. My suggestion is to lay some wax paper or parchment over your coconut ice cream and store it in an airtight container. Take it out of the freezer quite a bit before you are going to serve it so it softens up. Hope it works out for you 🙂
What great flavors. This looks so pretty, and sound amazing. I have never thought to use coconut milk instead, will have to try that!
Erin, you need to try ice cream with coconut milk ~ so very tasty!
Now THIS is just gorgeous, Marla! I love watermelon and this is perfect for summer (and me!) Pinning!
This sounds/looks really good and refreshing!
Oh my goodness, your blog is so gorgeous! ^^ And this sounds extremely delicious, like an edible island getaway.
Hi! Thank you so much 🙂 Love the idea of that edible island getaway!
Absolutely GORGEOUS post Marla!! 🙂
Thanks Melissa! Fun to see you over here 🙂
I love the idea of the chocolate chips as watermelon seeds!

I’ve never made watermelon ice cream, thanks for the idea, will try it. I make often mango ice cream, we love the flavor… 🙂
I love how healthy you are and how you can show people like me how easy it is to indulge without indulging tooooooo much. Thanks for the great recipe and amazing photo inspirations!
I’ve made a couple of ice creams with coconut milk and it really does add a fantastic flavor and texture. This is definitely one to try!
You think of everything! So creative and fun. I love using watermelon in recipes but this looks amazing. I’ve never heard of nor tried watermelon ice cream but I bet this is delish.
Hope all is well, Marla. Miss you and love ya.
Hugs!!
LOVE!! perfect for summer!!
Loooooove it! So refreshing for summer. I can just imagine hanging out in Telluride enjoying a big bowl of this with that pretty spoon… lovely!
I just received an article I have to make and shoot this week that involves watermelon! This is such a refreshing flavor for ice cream, yum. And oh gosh, I love coconut! I could eat that whipped cream with a big bowl of chocolate ice cream. [:
How pretty, I love the watermelon paired with the lime – so refreshing!
This is so pretty Marla! I love the mini chocolate chip topping.
What a pretty styling, Marla! And love the flavors in this recipe 🙂
Lovely 🙂
I didn’t really think bikini-friendly ice cream was possible but leave it to you, my dear! This looks DEEElicious!
Joanne, sure ~ why not. My bikini loves this ice cream as long as I don’t eat a few pints in one serving 😉
I love the use of so few ingredients in this ice cream, Marla. Looks great!
This has got to be the most creative watermelon incarnation I have seen yet. Brilliant!
Thank you Donna!! I had fun with this recipe 🙂
What a gorgeous and tasty looking ice cream! Love the flavor combo’s.
This is even dairy free! I have to try this for my daughter she is a watermelon freak, and loves limes & cold stuff too.
This is like my favorite cocktail in ice cream form!
What a unique way to serve up a cold treat! Love it!
I made this and it turned out really funky tasting 🙁 I’m wondering if it was maybe from the stevia? I like stevia but haven’t used it TOO much. I don’t have the drops, I have the pure powder. I used about 1/16 teaspoon. Do you ever use the powder?
Delicious!
This sounds so amazing! I can’t wait to give it a try. Thanks for the mention of my banana ice cream post too!
