Across the nation bloggers are baking up their finest treats to sell and raise money for the awesome charity Share Our Strength. My friend Gaby from What’s Gaby Cooking organizes and puts this event together to help raise money to fight the war against childhood hunger. To make sure no guests go hungry at the bake sale I am bringing these Double Chocolate Banana Scones, they are vegan and gluten free. *smiles*

The cute little chalk guy you see on the blackboard, that is the first drawing my four year old son has done that looks nothing like a scribble. It is a cute stick figure with a belly button. Him and my son likes scones! After I did my Sun-Dried Tomato Hummus shoot my kids grabbed the blackboard and got all creative with it.

Gluten Free Chocolate Chip Scones by Marla Meridith

I hope you enjoy these chocolatey scones. The darker the chocolate the better for me, but milk or white chocolate would be super tasty too! I was tossed over whether to name these Double Chocolate Cookie Bars or Scones, but the texture was a bit more scone. They are dense, but soft at the same time with lots of chocolate flavor and a hint of banana.

Double Chocolate Banana Scones

Makes 8 scones
NOTES:

  • Add some nuts or dried fruits to these scones if you wish.
  • If you cannot find oat flour you can make your own by grinding gluten free old fashioned rolled oats in a blender or food processor until you have a fine powder.
  • You can also sweeten these scones with honey, maple syrup or agave. About 6 tablespoons (3 ounces by weight) will do.
  • I used a kitchen scale for all of these measurements including the liquids.

INGREDIENTS

  • 1/2 cup  (75 grams) Coconut Flour
  • 1 cup (115 grams) gluten free Oat Flour
  • 1/4 cup  (20 grams) unsweetened Cocoa Powder
  • 1/8 teaspoon fine Sea Salt
  • 1 teaspoon Baking Soda
  • 4 ounces Banana (about 1 large banana)
  • 3 ounces light, unsweetened Coconut Milk
  • Stevia Drops about 4-5 droppers full (adjust sweetness to taste)
  • 1 teaspoon pure Vanilla Extract
  • 2 ounces vegan semi-sweet Chocolate Chips or chopped Chocolate pieces
  • Powdered Sugar or Maple Sugar
METHOD

Pre heat oven to 350˚ with the rack in the middle. In a medium bowl whisk together flours, baking soda, cocoa powder, salt and add one ounce of the chocolate. Mix coconut milk, banana, vanilla, stevia in a blender or food processor. Add wet to the dry ingredients and form a dough. Press together with your fingers until you can knead into dough ball. Taste dough, add more sweetener if needed. Press dough into a 1/2 inch thick flattened disk. Cut into 8 equal pieces. Top with remaining one ounce of chocolate. Bake for about 10-12 minutes. Let cool on baking sheet and transfer to rack. Dust with powdered sugar or maple sugar before serving if desired.

  1. I am participating, as you know, in the San Diego “chapter” of Gaby’s bake sale and earlier today posted about my Nutella brownies I am bringing. Your scones look…heavenly! OH WOW!

    And who *are* you…both GF and vegan??!!! I love all the gf/vegan recipes you’re doing. Seriously, not easy to bake both gf and vegan and have the taste turn out in the end..but clearly, you have figured it out.

    1. Averie, I am having the best time combining the gluten free & vegan ingredients. Honestly, I am so used to these flours I don’t really need the wheat anymore. I am not entirely cutting it out, just reducing it.
      The vegan thing….a nice change of pace but I will always love my butter, eggs & cheese.
      Wish you could join us in LA this weekend but I know you will be having a blast away from it all!

    1. Grace, I thought the same thing when I used bananas in these scones. I wanted to use a fruit puree to add flavor, texture and to minimize fat. I looked around my kitchen and a beautiful batch of bananas winked back at me. Banana’s, chocolate and baking always a win!

  3. You list baking soda and salt in the directions, but not in the ingredient list. How much is needed?

    1. Marie *heart you* Thanks so much for catching that and playing editor! Just added those two ingredients to the list, that would be 1/8 teaspoon fine Sea Salt and 1 teaspoon Baking Soda. Let me know if you try ’em!

    Today I posted a recipe I was inspired to make by you 🙂 It is nothing like the recipe you posted (which was the Chicken with Coconut-lime peanut sauce), tho that looked great!I think it was your beautiful photos that made with want a similar dish!

    1. Hi Ragnhild, thanks for your sweet comment. I do plan on cooking & baking a lot more vegan recipes down the road. I like to have a mix in our meal rotation & ingredient list over here. I will dash over and check out your vegan version of my Chicken with Coconut Lime Peanut sauce, love that you veganized it!

  6. I guess I wasn’t the only one thinking double chocolate! I have seen coconut flour in the store and been tempted to buy it but I didn’t have anything in mind as for what to do to it. Do you think it comes through in the recipe as coconutty or rich or anything?

    1. Nikita, love how you adapted my Vegan Almond Chickpea Cookies great job! Yes, we both do have double chocolate on the brain. I don’t even taste the coconut flour in these scones. It adds a nice tender bite & crumb. Try it, bet you will like it 🙂

    1. Junia, I was tossed whether to name these scones, cookie bars & now I have brownies on the brain. They could be brownies – though a bit less moist. Let me know what you think if you bake up a batch!

      1. Haha! Oh trust me, I don’t blame you. I had only been blogging for about three months then and didn’t know anyone (and no one knew me), but I had fun. My husband and I were mostly downstairs from the restaurant the whole time, drumming up interest in the sale. Good luck tomorrow!

  9. Amazingly I have coconut flour in my pantry and I didn’t know what to do with it! And I think I have coconut milk, or at least something that can be made into coconut milk… 🙂 My only question – do you have any idea how much regular sugar I would use instead of Stevia? Or do you have any other suggestions if I don’t have stevia? If not, I can just play around with it and see. 🙂

    1. Hey Megan, I will be testing this later today with agave or maple syrup. The scones I bake with that are the ones I am planning on bringing to the Bake Sale, I will be sure to update the post & reply back to your comment when I do so. I have a feeling it will be about 6-7 tablespoons of sweetener – which would apply to the sugar. Baking time should stay virtually the same too.

Great photos and yay for your little one and his stick figure! I also have a four-year-old, and I wish I could capture everything she does on paper–isn’t it a riot? Love this recipe!

  15. Just made these! Made some alterations.. used shredded coconut in place of the cocoa powder, sprouted millet flour in place of oat flour, used some of a chopped 73% organic dark chocolate bar, and added an egg. They were like big half-baked cookies!

  18. These were DELICIOUS! I made my own oat flour and my own coconut flour (by blending in the blender)…which seemed to work out just fine. I added 1/2 cup white sugar because I didn’t have stevia — they were just the right amount of sweet. Maybe it’s because I was willy-nilly with my measurements but I ended up adding a lot more flour afterward because the dough was so wet! But as my hubby said, these got better and better with every bite. Amazing! LOVED them and definitely going into the regular rotation!

    FYI: You forgot to include the cocoa powder in the instructions section. It says to add one ounce of the “chocolate” which is a bit deceiving because you mean the chocolate chips but I was anticipating that the cocoa powder would be next to add when I was following the instructions. Anyway, I think it needs to say that you add the cocoa in with the flours (and then the one ounce of chocolate chips). 🙂

  20. So, we live in Uganda… and don’t have access to all these specialty items- could you just do 1 1/2 c white flour, cow’s milk and honey? The flavors do sound amazing!
