You heard me right. Bacon in your curry, and it’s healthy too. Just a little bit of bacon goes a long way and adds oh so much flavor. This recipe is like a dream come true my friends. In the same way that I can’t get enough pumpkin I also can’t get enough sweet potato. If my skin turns orange we will just go with it, OK….
Serve this up over quinoa or rice. Or do as I do and serve alongside a heaping bowl of steamed veggies. Remember I like low carb but my kids and hubs prefer something a little heartier. Dip some crackers, pita or tortilla in this. All is great no matter what you do.
One of our favorite fall savories is my Pumpkin Coconut Curry with Chicken Meatballs. This is sort of an expansion of that concept. Except this one has sweet potatoes and bacon.

It looks lovely, Marla! Savory food and/or warm-ish comfort type foods are sooo hard for me to photograph. I can never make them look as beautiful as you made this one look. Bacon and curry just seem like complete opposites. I never would have ever thought about combining them! I’m not sure my brain and tastebuds are on the same page here… I’m totally intrigued though! Good thing I trust your recipe sense!
Jeff, I get that. There is just a pinch of the turmeric and other seasonings in this, you can use all or some. I always like to have unique & unexpected flavor twists. Intrigued is good….as long as the results match up when you make a batch! 🙂

OOOh I love curry…and you made me LOL. A friend of mine really turned her baby orange. after she delivered she CRAVED carrots and spinach all the time. She ate so many her breastmilk turned the baby orange! I’m not kidding! They called it carotenemia. When you said that I saw an orange Marla eating a bowl of sweet potatoes, LOL!
Same thing happened to my daughter when she was little… Too funny!!
We love curry at our house – although I’ve never tried adding sweet potato puree or pumpkin pie spice to curry. It must add some nice sweetness.
