Sweet Potato Coconut Curry with Chicken and Bacon

You heard me right. Bacon in your curry, and it’s healthy too. Just a little bit of bacon goes a long way and adds oh so much flavor. This recipe is like a dream come true my friends. In the same way that I can’t get enough pumpkin I also can’t get enough sweet potato. If my skin turns orange we will just go with it, OK….

Serve this up over quinoa or rice. Or do as I do and serve alongside a heaping bowl of steamed veggies. Remember I like low carb but my kids and hubs prefer something a little heartier. Dip some crackers, pita or tortilla in this. All is great no matter what you do.

One of our favorite fall savories is my Pumpkin Coconut Curry with Chicken Meatballs. This is sort of an expansion of that concept. Except this one has sweet potatoes and bacon.

Did y’all know that I write for the Chef Marcus Sameulsson blog? Last week this recipe was featured over there. Have you been watching the Next Iron Chef Super Chefs on the Food Network? Marcus has been rocking it over there as he battles to become the Next Iron Chef!

Will I be seeing any of you this weekend in San Francisco at the Foodbuzz Festival? I will be attending courtesy of Alexia Foods. Look for the petite gal wearing cowboy boots and pop on over to say *hi*

Tyler will also announce the “Reinvent a Classic” French Fries finalists at this time! Hmmmm. I wonder who the finalists are? Can’t wait to hear about their FAB creations. There are 4 finalists and I will let you know when you can start voting. Just sayin’

For now let’s just eat some curry…

  1. It looks lovely, Marla! Savory food and/or warm-ish comfort type foods are sooo hard for me to photograph. I can never make them look as beautiful as you made this one look. Loving the purple backdrop…perfect with this recipe and “vibe” and mood of the food. You have a gift for photog and food styling my friend!

Have fun this weekend. Wish I could be there to say hi in person!

    1. Averie…I shot this last SPRING!!! So much has changed since then. Glad this is still passable 😉 Many things I would do different if I shot it now. Sometimes that is not an option. I sooooo wish I could see you in SF this weekend. xxoo

    1. Kiran, of course I know you are a curry girl. I swoon over all of your recipes on your blog. Sorry we will not have a chance to meet this weekend. Hopefully we will sooner than later 🙂 xxoo

  2. Such a great recipe. I love the pictures. Have fun at the festival. Wish I could be there. Kudos on the boots, I just finished cleaning horse tack. But I did it in slippers. Lol!

  3. This looks as though it’s bursting with flavor. You’re right – a little bacon does go a long way and I’m guessing it takes this curry to a heavenly level. Have a great time at the Foodbuzz Festival!

  4. Bacon and curry just seem like complete opposites. I never would have ever thought about combining them! I’m not sure my brain and tastebuds are on the same page here… I’m totally intrigued though! Good thing I trust your recipe sense!

    1. Jeff, I get that. There is just a pinch of the turmeric and other seasonings in this, you can use all or some. I always like to have unique & unexpected flavor twists. Intrigued is good….as long as the results match up when you make a batch! 🙂

  5. What a great combination! I had never thought of bacon and curry together, but it sounds like a dream. How fun that you write for Marcus Samuelsson’s blog – he is my favorite!

  6. Perfect combination. There is nothing finer than coconut curry on a cold rainy day like today. Now that’s comfort food! Have a great time in SFO!

  7. Fabulous recipe! I love the combination of ingredients and flavors. Anything coconut and curry is a hit for me! Have a great weekend in SF! 🙂

  8. Hi Marla,

It seems a lot of people are going to the Foodbuzz event. I contacted FoodBuzz and it’s invites only or a little to expensive for me to attend the event. I just want to do all the Saturday events, and I would LOVE to see Tyler Florence do a cooking demo, not only is he a great chef, he’s so dreamy! lol

Like you, I love sweet potatoes and pumpkin to!!

    Have fun in SF!

  9. OOOh I love curry…and you made me LOL. A friend of mine really turned her baby orange. after she delivered she CRAVED carrots and spinach all the time. She ate so many her breastmilk turned the baby orange! I’m not kidding! They called it carotenemia. When you said that I saw an orange Marla eating a bowl of sweet potatoes, LOL!

  10. This curry looks amazing, Marla! Sweet potato and bacon sound like an incredible combination — so delicious in that creamy sauce. By the way, I just voted for you in the Alexia challenge — fingers crossed and good luck, sweetie!

  11. Could you substitute pumpkin for the sweet potato puree? I have everything except for the sweet potatoes in my pantry and am totally drooling with hunger pains over this recipe!!
