Here is a recipe that is super quick ‘n easy. A rustic comfort food dish that has lots of great for ya cauliflower topped with cheddar cheese and salty Prosciutto.
Enjoy as a side dish, main course or make a salad like I do…
Sometimes recipes are created and they need to be eaten immediately.
I was on my way out to ski and I was starving. The smell of this gratin baking made me even more hungry. After a quickie photo shoot it was enjoyed.
I added some of my favorite roasted sweet potatoes to my salad.
I have a giant white couch & I shot this and ate it right there on that very couch. Didn’t even make it to the kitchen table. Don’t tell my kids that ’cause they are not allowed to eat on the white couch.
If you don’t have Prosciutto or you can’t find it ~ no worries. Use bacon or ham.
Use your favorite cheese(s) too. I did a mix of sharp white and mild yellow cheddar for this recipe.
No excuses about finding the cauliflower, OK?
I KNOW you can source that. It is pan seared and then roasted. The nutty flavor is irresistible!
What kind of cheese do you think you will put on this?

Now that would be a tasty gratin! I have really been into cauliflower lately!
This sounds incredible. I’ve been on a major cauliflower kick lately. Perfect timing!
My family can never get enough cauliflower. This gratin looks amazing!
This looks divine and so cozy for the cold weather! I’d have a hard time deciding on what cheese I’d use. A melty fontina sounds nice, but just simple parm crisped up over the top wouldn’t be unfortunate either!
A great combination! This gratin looks very tasty.
Cheers,
Rosa
Stu-huuuuunning.
I can’t get enough cauliflower! Great dish Marla!
Love the meaty prosciutto in this. So divine!
I adore cauliflower, but the prosciutto puts it over the top!
This has my name written all over it! Looks perfect Marla 🙂
You have the best ways of preparing vegetables – and for a not-such-a-big-veggie-fan, these are genius!
That’s great to hear Marian ~ hopefully you can try this really soon. Might convert you into being a veggie lover 🙂
this is perfection! i love how rustic it looks and all the flavors! yummy, Marla!!
This does look so perfect. I love the crispy cauliflower in there. Cheddar cheese does look pretty perfect, but a gruyere wouldnt be so bad either 🙂 Yum!!
Gruyere would be wonderful Carla!! Great idea 🙂
I love a rustic gratin, this looks so tasty!
Sounds Yum..
I am loving the combination of lovely flavors n texture in here.
Thanks Reem!
I just love roasted cauliflower. And then mixing it with the prosciutto and cheese…yum!
Lana, roasted cauliflower is dreamier than most would expect.
bookmarking to make for the family!!!
yum! I love how colorful you made this too!
Roasted sweet potatoes and roasted cauli are two of my faves! Love that salad of yours!
This looks delicious. I never would have thought to top it on a green salad but I love that idea! Delicious.
SO into this idea!! I’d add some fontina and gruyere 🙂
I love this dish and love that you added sweet potatoes to your salad! So perfect! I have some cauliflower that needs some roasting! I bet I could get my Husband to eat it, if I include bacon! Great recipe!
I’m dying to make this!! I think I’d add some capers and keep the cheddar!
Aimee, the capers are a great idea and one I will try!
Lovely Marla- and so filling and healthy while still being tasty!!
I love simple and flavorful gratin recipes. This looks so rustic and yum, Marla 🙂
Never thought of cauliflower gratin, but gaw it sounds amazing!
oh this looks incredibly delicious Marla!
This looks like it would hit all my favorite notes–and I love how crispy bits of prosciutto get when they are baked–that’s an even better texture contrast than I usually get in a gratin. Thanks, Marla!
I love every single one of these flavors, Marla! Looks fantastic!
Love the saltiness the prosciutto adds to this dish!
Marla I LOVE this recipe. I’ve been really into cauliflower lately. I have only had it my grandma’s way, which is battered fried – so good but a million calories. Recently I made a gratin and my kids loved it and then just last week I made a cauliflower curry stew and they also loved it. I’m going to have to try this one next.
You can’t beat cauliflower and cheese together, I like it with goat cheese as well.
Finally got around to making this today. I used Gouda as my cheese and I have only one word: YUM! Thanks for the delicious recipe.
Oh my gosh, YUMMM! MAking that for sure!
xxoo, Andrea
