Recipe: Cheddar, Avocado & Spinach Paninis

I’ve combined a few of my favorite ingredients in these paninis. Cheddar cheese, avocado & baby spinach. After all, we do need some veggies with all that cheese & butter, right?!

 2 slices of your favorite bread
 2 thick slices of cheddar cheese
 sliced avocado
 baby spinach leaves
 mayonnaise
 plenty of softened butter

Pre heat a panini press to medium high (about 375 degrees F) Lay the bread on a work surface. On each slice slather on some mayo on one side of each piece. On one side lay on the cheese & avocado, on the other place a few spinach leaves. Carefully put the sandwich together. Slather butter on both sides of the sandwich. Grill for 5-6 minutes, or until you have beautiful grill marks & the cheese is melted.

If you do not have a panini press you can also cook this perfectly in a heavy bottomed skillet. Pre heat the skillet over medium high heat. Place some butter in the pan. Cook the sandwich for 3 minutes until golden brown. Carefully flip it & cook another few minutes. Watch the heat carefully so it doesn't burn.
