Recipe: Hot Cocoa Cookies

You will love how there’s an outer crispy shell that yields to a chewy center. I used American Heritage Chocolate in the batter and to top each cookie. Do this while the cookies are still warm so the chocolate melts.

 1 1/4 cups butter, softened
 1 cup granulated sugar
 2/3 cup light brown sugar
 3 large eggs
 1 teaspoon pure vanilla extract
 3 1/4 cup unbleached AP flour
 3/4 cup American Heritage Chocolate
 1 teaspoon baking powder
 1 cup semi-sweet chocolate chips, melted

Pre heat oven to 350 degrees F with the rack in the middle.

In a stand mixer with the paddle attachment, cream the butter & both sugars together until light and fluffy. Add the eggs & vanilla, mix well. Add the next 4 ingredients. Gradually beat into butter mixture until blended. Add the melted chocolate chips last, combine well.

Have a work surface ready. This dough takes a bit to work with as it's super crumbly! Form twenty-five 1 1/2 inch balls. Place them onto baking sheets (9 to a sheet) Bake for 15-16 minutes. The edges & bottoms of the cookies should be slightly browned.

Remove from the oven & immediately top each cookie with a pinch of American Heritage Chocolate It will melt beautifully! Cool on baking sheets 5 minutes; remove to wire racks and continue to cool.
