Summer Fruit Crostata

Lately I have been on a dessert pizza kick. These crostatas are pretty much dessert pizzas/open faced pies. No matter how you slice ’em.

With the abundance of beautiful summer fruit there is temptation everywhere. Use whatever you have on hand for these quick rustic treats. Folks who love pie enjoy the ease of a crostata, it takes minimal effort but yields similar results. It takes just minutes to roll out some pizza dough and top it with your favorite fruits (

 1 pound (16 ounces) Whole Wheat or Gluten Free Pizza Dough (homemade or we like Trader Joe's
 8 to 10 ounces fat free Ricotta Cheese
 a thin layer (about 2 ounces) unsweetened, all fruit Jam, on one I used Orange and the other Raspberry
 1 Peach, cut into thin slices
 2 Apricots, cut into thin slices
 1/2 cup of fresh Raspberries
 1/4 cup chopped, toasted Nuts
 melted unrefined Coconut Oil, Butter or whisked Egg
 Vanilla Stevia Drops or English Toffee Stevia Drops to taste, or your favorite natural sweetener
 optional: a few drops of pure Vanilla or Almond extract
Optional Garnish
 melted Chocolate for a sauce
 fresh Mint
 more chopped Nuts
 powdered Sugar or Stevia, granulated Truvia is really good on these
 freshly Whipped Cream
 a pinch of Cinnamon
 some more Jam

Pre-heat the oven to 450 degrees F with the rack in the middle. Prepare a baking sheet with a Silpat liner. Create equal sized balls of pizza dough and press or roll into 1/4 inch thick flat discs, place on baking sheet. Mix ricotta cheese with your sweetener of choice and any flavored extract to taste.

Spread a layer of ricotta on each pizza and a thin later of jam. Top with sliced peaches, apricots and raspberries. Sprinkle with chopped nuts. You can brush some melted unrefined coconut oil, butter or a whisked Egg on the edges of the crust to make it extra golden. Bake for about 10 minutes or until the dough is cooked through.

Feel free to use whatever fruit you have on hand. Plums, blueberries, strawberries would be wonderful too.

Make your own pizza dough or Trader Joe's has a great whole wheat one that we use often. I have some pizza dough recipe links at the bottom of this post.

I divided one pound of pizza dough into 2 pieces, you can make minis or one large if you prefer.
