Mexican Hot Chocolate Brownie Bites

These Mexican Hot Chocolate Brownie Bites are perfect for parties and sweet afternoon snacking. The perfect size for your sugar cravings. Flavored with Mexican Ceylon cinnamon and a quick hit of cayenne pepper. These small, dense, fudgy brownie bites pack a whole lot of flavor for all you chocolate lovers out there!

 2 sticks (1 cup) unsalted butter, melted and cooled
 1 cup sugar
 2 large eggs
 1 teaspoon pure vanilla extract
 1 cup all-purpose flour
 1/2 cup hot chocolate or cocoa mix
 1 teaspoon ground Mexican Ceylon cinnamon
 1/4 teaspoon cayenne pepper
 1 teaspoon fine salt
 1/2 teaspoon baking powder
 one 12-ounce bag semisweet chocolate chips, divided

Pre heat oven to 350 degrees fahrenheit with the rack in the middle. Spray a 9X9" baking pan with cooking spray and line with parchment paper.

In a bowl combine the butter, sugar, vanilla and eggs.

Mix in the rest of the ingredients (using only 1/2 of the chocolate chips.)

Bake for 30-35 minutes. Remove from the oven and while still hot, top with the remainder of the chocolate chips. Let them sit for 5 minutes. Spread the melted chocolate over the top of the brownies. Let cool completely and cut into squares.
