Currently in Vail, CO. Currently it’s very much winter outside. Currently I’m relaxing in my hotel room ~ very much craving this Almond Cornbread Breakfast Cake. Not too sweet and sure good for ya. Have a hearty piece for breakfast, brunch or for a snack.
For a little somethin’ more….slather it with some jam & your favorite nut butter.
Please don’t forget the really strong espresso…
Milk is good too. Coconut milk, almond milk…something hot or cold to sip while you munch on breakfast cake.
These cakes are gluten free and vegan. Good for most…
Take a slice or two to go. If you don’t have almonds and almond butter try a different nut or seed.
Do be sure to come back and let us know how it goes if you try something new. Deal? Deal.

Hello gorgeous breakfast cake! I am pretty sure that this is going to make an appearance on my table this week. Saw on Facebook that your husband was having surgery, I hope he is doing well!
Hi Meg! Thanks so much for the well wishes. He is heading into surgery shortly…. Hope you get to try this recipe real soon!

Thanks Alice! The morning started off warm & now the cold front is pushing in….
Your food styling is second to none, Marla! Absolutely inspiring. And this cake! So, so scrumptious and I love how easy!
Hi Georgia! Thanks for the kind words & yes, this cake is super easy & healthy too!
Yeah! I just got some vanilla stevia at the store and was wondering what to make with it. Problem solved, thank you so much!
Great! Hope you enjoy the cake Traci!
What a beautiful snack cake, Marla!
I love how I can see the big slivers of almonds baked right in. Great clarity and nice, healthy sounding bread!
Thanks Averie! I thought those extra almonds were kinda fun too ~ glad you noticed 😉
This sounds like it would be delicious with a cup of strong black coffee!!
Thanks Brianna ~ I am thinkin’ everything is waaaaayyyy better with a strong cup of coffee!!
Can’t wait to try this. Quick question: when you say corn flour, do you mean cornmeal?
Ginger there is actually a super fine corn flour…here is the link and I will also add it to the recipe.

Lovely! These cakes look just delightful! Love a little cornmeal in breakfast cakes. 🙂
This is exactly the kind of treat I craved this weekend–healthy and with almonds!–but I had no luck finding a recipe worth trying. I have homemade almond butter that is begging to be used in this cake. Can’t wait to try it–thanks for the recipe. 🙂
So pretty and delicious sounding! I love cornbread all the time.
Super healthy and just what I wish to bite right now with my cup of tea! I am gonna bake this, yes.
What a beauty of a cake! I would gladly take the entire loaf for breakfast 🙂 haha just kidding, I’m not thaaaat greedy 😉 although this would be perfect with coffee!!
Gorgeous cake and the fact that it’s for breakfast?! Perfect 🙂
I’m all about cake for breakfast girl ~ when there is no guilt involved 😉
Marla this is so incredibly gorgeous! Pinned and making soon!
Almonds are my baking crush and so inspired with cornbread. Done and done to your deal and deal.
Currently I really need this strong espresso 🙂 And your cornbread… It is a hard evening but your beautiful pictures make it easier.
I’ve been experimenting more and more with going mostly grain free – except for corn. This would be a perfect treat, can’t wait to try it!
Wow, your almond cornbread cake looks amazing! That seems like the perfect dish to make for breakfast. It’s perfect for the mornings when you are on-the-go!
This looks so good Marla – and I love sweet stuff made with corn flour and corn meal – they go together so well!
Love the dominant flavors of almond and coconut in this cake! Perfect for any time of day!
This almond cornbread breakfast cake is a delicious, beautiful cake that is always a hit at any gathering or even at home!
This cakes looks delicious. It will go perfectly with a cup of hot tea, especially if it’s snowing outside, in April. 🙂
Wonderful bread! Could easily down a slice or two right now for lunch. Would love it with a nice big cup of coffee. I love baking with almonds!
I need a few slices with my tea! YUM & pinned!
LOVE cake for breakfast! This one looks so amazing! And I hope your hubby’s surgery went well! Thinking of you guys!
Thank you Carla! We are home now & in the beginning of recovery stages 🙂 Great to be back!
Cake for breakfast – my favorite way to start the day!
Thanks for sharing Marla and thank you for the lovely comment left on my guest post on Sommer’s blog today
Oh wow, I love almonds so much 🙂 this looks heavenly.
This is in the oven right now and I can’t wait to try it. I added a heavy dash of cinnamon (because, well, it’s delicious!) and a sprinkling of dried cherries to the almonds in the middle. I also adapted a bit more due to not having stevia, but I have high hopes…my kitchen smells yummy. 🙂
Oh great Cindy!! Sounds perfect & I love the dash of cinnamon!
I’m all about cake for breakfast and this is beautiful, Marla! Love all those almonds in there too! All I need now is a big cup of coffee!
Mmm…I wouldn’t mind starting the day off with a slice of this!
I really want to make this cake but I have a strong aversion to stevia so I’m going to have to make some adjustments to make it just right
Awesome! Let me know what you do so I can share with my readers 🙂
I am so excited to make this loaf. But my local stores dont sell the bob’s corn flour you posted. Is masa harina an exceptable substitution? If not any suggestions? I didnt want to wait for shipping if I order online, LOL
Hi Jennifer…..I am not sure if that is a good substitute as I have never used it. Are the ingredients the same? And the grind of the corn?
Do you think this bread would freeze and travel well?
Not sure….
