Most of my sweet recipes are sweetened with stevia. I chose to live a sugar free lifestyle and it has changed my world for the better. With this change it is so much easier to control weight. Workouts are shorter, which opens up time for more blogging! My moods are better, skin is clearer, I have less bloating and better sleep. Cookies for breakfast? Of course when they are Apple Oatmeal Breakfast Cookies. These are loaded with high energy, great for you ingredients. This cookie batter comes together quick. It’s got gluten free oat flour, fresh apples, almond butter, thick greek yogurt and sweet potato purée. You can also add in a handful of toasted nuts, dried fruit or chocolate chips. Or you can smear a giant dab of peanut or almond butter on top.

Broccoli Cauliflower Avocado Soup

Pureed soup recipe with broccoli, cauliflower, sour cream, smoked paprika.

There is so much to love about a great big batch of homemade soup. Over here puréed veggie soups are a big hit. They are simple to prepare and you really can’t mess them up. Sometimes I roast the vegetables first other times I boil them until softened in a pot of broth. If you are not a huge fan of broccoli or cauliflower, I bet this soup will convert you to love them. A delicious creamy purée is formed when you combine the two together and add a whole avocado.

We adore muffins over here. They are perfect for any time of day, as grab and go snacks, breakfast or even pre or post workout meals. This recipe has a silky, delicate and moist texture. They are gobble ’em up great. There is coconut in two forms, coconut flour and unsweetened light coconut milk. There is also pomegranate in two ways, the juice and the seeds (arils.) Bursting with flavors and filled with whole grains, fruit, and healthy fats – a guilt free treat that will make you smile.

There is something special about an upside down cake. The technique is very simple, but it seems like something more. Sweet goo meets crumbly cake makes this an irresistible creation. Maple, apples and cinnamon are the perfect partners. They are delicious in any season and are readily available year round. Almond meal in this cake adds a great texture and a subtle nutty flavor. Chocolate Dipped Fruit on a Stick

 

What is it about the simplicity of chocolate covered fruit that makes us all smile? With Valentine’s day around the corner I wanted to share one of the most popular treats – with a few of my little twists. I always use the best chocolate and I had tons of fun with the toppings as you can see. Treat yourself, your kids or your grown up Valentine to these small, delightful indulgences. After an overwhelming response to my Raspberry Cream Cheese Pan-Crepes, I thought that we should dive a bit further into Valentine’s goodies.

There is so much more than strawberries out there when it comes to dipping. Sure those are delicious, but so is citrus, blackberries, blueberries and raspberries, bananas, apples, etc. Come to think of it there is not much I don’t love dipped in chocolate. My friend Damaris just wrote a lovely post about family fondue night. It was a great inspiration to start melting blocks of our favorite treat.

OK, so these mandarins are not on sticks (they kept sliding off) but they sure were tasty anyway and easy to hold in your fingers when dipping. I added some stevia granules and dried orange rind to some and rock salt to others. The salt was way much – I would change that idea to coarse rock sugar next time.

Some of the chocolate I spiced up with ginger, cardamom and cinnamon for a playful flavor twist. You can use your favorite kind of chocolate. From dark to milk and even white, have it your way. I love unsweetened 99% that I sweeten myself with stevia. My kids enjoyed when I brought these treats to school at pick-up. They too love the dark, rich stuff like their mama!

You know what is the best part about chocolate dipped fruit? It takes just a few minutes to make & it tastes heavenly with virtually no effort at all.

My favorites were the blueberries. There was the perfect ratio of chocolate to fruit & they are so easy to pop in your mouth. If you use larger fruits such as bananas or apples, simply cut to bite sized pieces before you dip. Not rocket science and that makes it all the more fun.
