Leaf Peepers! 10 Best Places for Fall Foliage Road Trips

Pack your bags we’re going on a road trip! A very colorful one…

I’ll never forget the first time I heard the words “Leaf Peeper” I giggled a bit and absolutely fell in love with the term that describes people who drive around the country on the quest for peak autumn colors. Leaf Peeping is thrilling and induces a whole lot of happiness. The time to do it is short and sweet, so planning ahead is a must.

What is it about the beauty of fall that’s so magical? This has always been one of my favorite times of the year. It’s romantic, the air is fresh and the temps cool down. It’s time for those warm cozy sweaters and hot spiced drinks. This Crockpot Gingerbread Latte has your name written all over it!

Here in Telluride, couples are cozied up outside cafes sharing stories, hands in mitts earlier than one would think. In the high country fall happens before we know it, late September and early October is the time to catch our show.


Saving up those vacation days? Fall is a wonderful time to plan a road trip. There’s nothing like cruising down the road with the windows down and the cool breeze blowing on your face. There are many places around the country where you can catch the fall show.

I plan on doing many road trips this fall, both near and far. Do you have any plans to do the same? Thankfully living in Telluride we have a spectacular autumn, the aspen leaves turn the bright golden hue and everything glows in the sunshine. I don’t have to go far at all.


There are many options for you to view the natural splendor of fall. Depending upon where you live the leaves take on so many different colors. Different tree types show differently. Some areas are very golden and others torch up bright red. If you are back East the maples turn that gorgeous crimson hue. In Telluride, Vail and Aspen our aspen trees glow yellow. No matter what spot is closet to you…take that road trip, I’m certain you will be happy if you do!

When to go:

As a general rule: leaf peeping progresses from the north of the country to the south, and from its highest elevations to its lowest. Plan for the beginning of the show in the first week of September and the very last act in early November.

Summer Fun in the Utah Valley

This is been such an amazing summer so far! Gosh the days are flying by, but they have been jam packed with all kinds of excitement.

One-Pot Filipino Chicken Adobo

Around here we can never have enough delicious chicken dishes. Especially easy ones that can be cooked in just one pot. Recently my son was having a late night Food Network binge (Bobby Flay was having a Chicken Adobo cook-off,) when he woke up the first thing he asked me to do was make chicken adobo. He said the show convinced him that it would be the best dinner ever! I had never actually heard of this dish but now I’ve got to say it’s going to be on our meal calendar constantly, especially now that we’re heading into the busy back to school time. Nothing beats a healthy & filling one-pot meal when the going gets busy.

So what is Chicken Adobo? Simply put this delicious dish is a mix of sweet salt tangy and garlicky flavors that you absolutely fall in love with the moment you taste them. It really couldn’t be simpler to prepare and I guarantee you your entire family will love it! So where does this creation Chicken Adobo come from? It’s actually a Filipino dish that is served over rice. It’s a complete meal that will warm bellies on any night of the week but is also great for when you have company. I can guarantee we will be enjoying this recipe over and over again especially in the fall and winter after super active days on the ski slopes here in Telluride, Colorado.

If you love to have leftovers, this recipe serves 4-8 and tastes just as great the day after as the flavors marry and the chicken marinates even more. I have also made extra sauce to use over rice and veggies.

I can’t believe the beautiful results….and for virtually no cost at all. Chances are these 2 ingredients are in your kitchen already so you can try this scrub right away. Guess what they are? Brown sugar & olive oil.

Directions

Cleanse skin removing all makeup, leave the skin moist, rub in some scrub. Leave on 3 mins till tacky. Rinse gently with a warm washcloth. Voila!

Combine 1/4 cup brown sugar with 2 tablespoons olive oil. That’s absolutely all. Simply multiply the recipe if you want to use on your body as well. Have some scrub left over? No problem, store in an airtight container for a few days to use next time. I make a fresh batch every week and I use this scrub 3 to 5X per week.

Instead of heavy sweets, I can often satisfy my sweet tooth with something healthy and fruity. I got so excited the other day when I saw stalks of rhubarb at the local market. I bought a few pounds of it and have been making everything under the sun with this ingredient taking center stage. We are loving this simple Rhubarb Applesauce to all kinds of baked goods.
