Lightened Up Peanut Butter Crinkle Cookies

 

Often cookie cravings creep in & we find ourselves crawling the walls until we get one (or three) in our hands! I came up with this Lightened Up Peanut Butter Crinkle Cookies recipe because they pack all the greatness of a higher calorie PB cookie without the refined white sugars. They also have no butter, coconut oil is used instead. I’ve been dying you share these with you ever since the first bite!

Note: My son is not typically a peanut butter fan and he fell in love with these cookies. Mayer I’ve helped transform him into a forever PB lover!

Monday’s here & it’s time for a great week ahead! Over the next two weeks i’ll be sharing delicious & simple desserts including this Strawberry Icebox Cake that all have 5 ingredients or less. These recipes are fantastic for Mother’s Day (make them with your kids) and for all kinds of celebrations big or small.

All you do is layer whipped cream, wafer cookies (or in this case graham crackers) and let it sit at least 4 hours to overnight in your fridge. The cookies soften and make it easy to slice into like a cake. So cool huh! You can add berries, fudge sauce, nuts and all kinds of creative toppings. It’s fool proof and crazy delish!

Flatbread 5 Ways – Recipes for Everyone!

Over here we LOVE flatbread and we’re super experimental with our toppings. Here’s five of our favorites, three that are great for lunch or dinner: Tex-Mex Flatbread, Thai Chicken Flatbread and Greek Salad Flatbread. A breakfast version, Ham, Egg and Cheese. And for dessert & to satisfy late night sweet cravings you must dig into these S’mores Flatbreads!

Here’s an awesome idea…..How about a FLATBREAD BAR at your next party? Spread out an assortment of base layers and toppings & have your guests build their own flatbread creations. All of these are baked at 400 degrees for 10 minutes, which makes things super easy. Run a blind taste test & host a contest for the winner! So fun for kids and adults.

What’s so cool about flatbread is you can be versatile with your toppings and base layers. For me, thin whole wheat tortillas are best. I’m all about tasting the toppings and a thin crispy edged crust. Pita, lavash and pizza dough work well too. The debate is still out on how flatbread is different from pizza. Some say a flatbread has no yeast. Others say flatbread offers them more diversity to experiment than pizza does. Some say there is no difference at all.
