I cannot believe summer is winding down and the kids are heading back to school. Sounds like most of us have been busier than we ever could have imagined. “Down time” these days is filled with work and play but not so much relaxation. This guacamole salsa recipe is for the last week of Summer Fest. Hopefully it will help you unwind and taste all the flavors of the season. Creamy avocado mixed with ripe juicy tomatoes and smoky bacon. What more could you ask for?
The past 5 weeks it has been so fun to participate in this fun fest. I have met new friends and gotten to know some great blogs. Our recipe adventures have covered Corn, Zucchini, Stone Fruit, Herbs & this week Tomatoes. For me salsa is the best condiment, sauce & dip. That is probably why I chose it for two out of the five Summer Fest recipes I created.
This salsa requires minimal effort. Collect your ingredients, chop and voila, your fresh guacamole salsa is ready. I went with nitrate free organic turkey bacon…..’cause that’s how I roll. Applegate Farms has a great line of organic nitrate free products. By the way looks like they just changed their logo, what do you guys think?
I picked up these juicy ripe tomatoes at the farmer’s market in Telluride. The colors of the hot peppers & tomatoes were breathtaking!
My kids had so much fun playing photographers & food stylists. My daughter got all excited when she got the lighting right. I love watching them shine with creativity & giggle with joy.
It was hard to convince them to keep their hands off the bacon.
My all time favorite meal is grilled salmon or trout with a heaping side of veggies, topped with large quantities of salsa. In Telluride I spoil us with Steelhead Trout regularly. The tomatoes, avocado & bacon accompany it perfectly.

“What more could [I] ask for?” Not much. This salsa looks totally wonderful, Marla. I’m not sure I would have had the courage to add bacon, but I’m so glad you did. We don’t get local salmon where I live, but this salsa would go so well with our local grouper, mahi-mahi, and mackerel!
Your salmon and salsa look soooo delicious. I want to get my fork and take a big bite. And the next day, maybe put all the leftovers in a sandwich…salmon and salsa. I really like your photo.
Just as our winter is drawing to a close I’m reading about all these late summer recipes. I feel like I’ve won the lottery and have a great little stash of recipes building for the first of our spring & early summer vegetables starting to hit our fruit & veg stands. Joumana, I know isn’t that hilarious! The kids actually have our old iPhones. The features are disabled, but they are able to play games and take photos! They had so much fun that day. Great memories all ready 🙂

Love the bacon in there. You might recall that I actually don’t really like avocados, but hey, there’s bacon, and the sight of your kids playing food blogger made me smile.
So I couldn’t wait for someone to make it for me, I broke down and made this amazing salsa myself! Bought some gorgeous salmon and baked it surrounded by broccoli and little finger potatoes. Then I smothered the salmon with your salsa and the family oohed and aahed for quite a while. A HIT!! We all say thanks for the great dinner Marla!

Summer is quickly coming to an end, but there’s no reason to stop having salsa. It’s good anytime and with anything. The bacon is perfect. 🙂

Adair, you could go with guilt free/no nitrate, low fat turkey bacon & feel great after. Unless you are off the meat thing. If that is the case you could go with a meatless bacon “tofu” for flavor.
