Wow! Can you believe it’s already Friday? Where did this week go? I’m en route to St. Moritz, Switzerland right now dreaming about this Black Bean Falafel Salad. In the Alps, I’ll be attending the FIS World Cup Ski Races, backcountry ski touring, on piste skiing, ice climbing and plenty of Aprés! Why can’t they serve things like this on an airplane? Why just overly processed little snacks?! Oh well, I’ll keep dreaming and you can cook up this healthy recipe.

There’s something about a salad like this that offers so much for so little. It’s super budget friendly, perfect for vegetarians and gluten free folks (use GF panko crumbs) and tastes fantastic! A high energy, healthy meal with minimal effort. The important things I need in my busy life these days. Another BIG bonus… my kids loved this recipe!!
