I made this Chocolate Chip Peanut Butter Skillet Cookie gluten free so everyone can enjoy it! This might just become your favorite snack & dessert. I can’t keep my hands off of it! How has your week been? Ours has been wonderfully busy  & productive. My parents escaped the harsh NY winter to visit us in the epic Colorado winter! As soon as they got to Telluride, it started dumping snow & it has not stopped for 1 1/2 weeks! We needed this snow bad…so it is more than welcomed & very much celebrated. Let’s face it, snow in the Rocky Mountains is meant to be & is all FUN. In NY it’s a hassle. We took advantage of the perfect pow pow & went on a family snowmobiling adventure. I cannot take how cute my folks looked in their riding outfits! We all had a total blast in the backcountry zipping around. Did any of you catch my SiriusXM Stars interview with The Moms this week? It was so fun! We chatted about how I started my blog & how I balance my time with work & family. Denise & Melissa the hosts are so candid & funny. Love them! Have you ever made a giant cookie in a cast iron skillet? You must try it if you haven’t. It’s so easy to dump the batter in the pan & bake it in the skillet. All you need to do is slice when it’s done. Isn’t that crumb gorgeous! I’ve always wanted to bake a gigantic cookie in a cast iron skillet!! I need to do this! love this! and a few of my neighbors have snowmobiles (I live in Wisconsin) and they go a snowmobiling in the field behind my house all the time. It’s crazy .. we’ll see people zoom by right outside my back window. life in WI I guess. 🙂

Oh man does this look good!! I wouldn’t be able to keep my hands off it as well. I escaped this New England winter for Park City winter last week. It was actually warmer in Park City, so it felt oddly good! Looks like you all had a lot of fun!

Made this for my kids for breakfast this week with a tall glass of milk! They loved it! So tasty! Their only complaint was the fact that it was a little crumbly…..do you think another egg would help? Other than that it was a big hit and would definitely do it again.!
