Cinnamon Chipotle Twice-Baked Sweet Potatoes

Looking for a great Thanksgiving side dish? Look no further then these Cinnamon Chipotle Twice-Baked Sweet Potatoes You can serve these sweet potatoes for brunch, as an any day side dish/main course and of course on Turkey Day. I always have a lot of nuts on hand, In this recipe walnuts or pecans are perfect or go with a combo of both. I love using pure maple syrup, it not only adds sweetness but so much flavor to these seasonal dishes. I also added a little bit of greek yogurt to the potato mash and fragrant ground cinnamon.  These sweet potatoes are topped with extra nuts, raisins & bacon and bourbon maple syrup. I can never have enough of all of those ingredients!

  1. I’m generally a fan of chipotle.

I just bought a bag of sweet potatoes and I think I’ll have to do a few this way for work lunches.

  2. Love, love, LOVE this so much, Marla! Your adaptations are more than OK – they’re stellar and brilliant! I have a personal life rule to never say no to bacon, and that bourbon maple syrup?!? Brilliant! Thanks so very much for your kind words, Marla! Hugs!! 🙂

  3. Marla, I have been following your blog for a few months now and you have delicious recipes with amazing presentation, and I love hearing about life in Telluride, since it is one of my favorite summer destinations. I can’t wait to try this recipe as a main course!!

  4. My favorite Southwest spice is cumin. We use it a lot and got my parents hooked on it, too. I also really like green chiles.

  5. I love shrimp fajitas. I really like so much Southwestern it is hard to say, but I think that’s my favorite. I like a combination of chili powder with cumin as a favorite spice. (I can’t decide which, both are about equally important to me.)
