She begged & pleaded & I couldn’t resist. My baby girl turned ten this weekend & she wanted mama to bake her a Strawberries ‘n Cream Birthday Cake.
A layer cake to be precise. With one layer of vanilla cake & the other with a strawberry one. She then went into details about a cream cheese ~ whipped cream frosting. Ohβ¦and not to forget a layer of strawberry jam between the layers.
Here’s how things worked out….
You will be pleased to know that this cake is not only gluten free, but also free of refined sugars.
Everything is sweetened with maple syrup.
Both the cake layers and the Cream Cheese Whipped Cream Frosting.
I’ll admit I even had a slice for breakfast the other day & felt great afterwards. No big sugar rush or anything.
My little gal had a great 10th b’day.
Her first time celebrating the big day here in Telluride. She has wonderful pals that sure know how to show a little gal a great time!
If you are not baking for any birthday parties any time soon, don’t fret. You can still go right on ahead & bake yourself a cake.

It’s funny Averie ~ the idea hit that I wanted to make the collage. It was kinda had to find lots of the older photos. Thank goodness for digital files sorted by year. Could you imagine if they were traditional images tucked away in shoe boxes? Never to be found again if that was the case! Thanks for the b’day wishes π
Your daughter is so lovely, Marla! There is something magical about ’10’. My son turned 10 earlier this year and transitioning to ‘tween’ status was a big deal I think.
I love the cake. I am gluten free as are my kids so all our cakes are GF. Oat flour is one of my favorites to use for the flavor and texture. This cake is simply perfect!

We made this cake for our daughter’s 3rd birthday today and it was so delicious! However, neither layer rose very much and the resulting cake was super dense… not nearly as pretty as yours. Any suggestions on how to make the next one even better?
Hmmmm. Not sure why it did not rise much. I’m at high altitude & not sure how that affected the outcome on either end. Glad it tasted very good though!
