Looking for me? Cool. You can find me at one of Telluride’s best restaurants Cosmopolitan. Parked in the Hotel Columbia just steps from the gondola ~ not only is Cosmo (the short name for those in the know) easy to find, but you will fall in love with the food!
I was joined by my pal Susan from Telluride Inside and Out (visit her blog for a complete review) & 2 others to enjoy this wonderful sampling of Cosmo’s menu on a chilly winter’s night. You too can join us for some bites!
Y’all know I love to keep the words short & show you food through pictures.
The menu is seasonal, well thought out, beautifully styled & delicious! Above you see the Classic Cosmo.
I have yet to meet Chef/Owner Chad Scothorn..but I will let you know when I do. He gets praise everywhere & my pal Paul Ferzacca the Chef/Owner from La Tour Vail says we will hit it off fabulously!
I did however get to meet the Chef de Cuisine Chuy Aymar. A great guy who is so very talented in the kitchen!
Cosmo is well known for their Aprés Ski 1/2 price sushi & $5.00 Cosmopolitans (LOVE) & $5.00 glasses of wine Monday-Sunday 5-6pm.
That’s right everyday you can get your sushi & buzz on at this elegant restaurant.
Don’t you worry, this is Telluride’s Aprés Ski scene. Which means you can wear your ski pants & plaid flannel shirts. Or your fur, diamonds & bling.
Below are a few more must try cocktails. The wine list is extensive as well. You will be very impressed by the selections.
Orange Cinnamon Margarita…
Apples to Apples…
We enjoyed a few appetizers including this super fun & elegant twist on a carnival classic.
Lobster Corn Dogs…
Goat Cheese Filled Burrata ~ this burrata is homemade, creamy & delish! Toasted pepitas & prosciutto round it all off perfectly.
Caesar Salad…
This classic salad is made even more fabulous with chunks of avocado & white anchovies.
Now let’s move onto some entrées…
Wood Roasted Duck Breast ~ rustic perfection!
BBQ Scottish Salmon…
Love the flavors in this salmon ~ my usual go-to meal here.
Vegetable Ragout is a wonderful option for folks who don’t eat meat or just want a night without it.
Grilled Beef Filet
Grilled to perfection with that compound butter on the top. A not to be missed dish for steak lovers!
Dinner was rounded off with some homemade desserts.
Trio of Homemade Ice Cream ~ a chill way to indulge your sweet teeth.
Wild Blueberry Pie…
Something about a warm flakey crust, steamy wild blueberries & cooling ice cream. Perfection!
I hope you enjoyed the beautiful flavors at Cosmo.
