You have probably had Speculaas or Speculoos cookies at some point. The popular brand you will see in the markets is Biscoff. Those are great and all, but making these homemade Dutch Speculaas Cookies with Peppermint Crunch Icing is way better! These are firm, gingerbread-like, spiced biscuits that are wonderful for dunking in coffee or hot cocoa. The almond meal in the dough adds a toasty flavor and snap. Traditionally from The Netherlands, these are also referred to as Dutch Windmill Cookies. No matter what you call them, I guarantee once you try some you will be hooked. The peppermint crunch icing makes them festive for the holidays, you can simply omit if you just want to savor the cookie in it’s purist form.
