I just got back from another journey. These days I travel pretty much every other week. It’s only gonna get more nuts now that festival season is here.

Why so much travel? I get called out on amazing adventures to shoot photos. Also to share the experiences with you. What that also means is I will enjoy many meals like this Feta & Artichoke Guacamole Toast. Simple healthy meals that take about 5 minutes to prepare.

Did I mention delicious too?!

This guacamole rocks. On toast or off of toast.

I enjoyed many spoonfuls before it even made it to the bread.

Serve this at your summer picnics & BBQ’s. It’s a great meal any time of the day!

Pack it in the lunchbox too. Toast your bread & bring a little side container of this spread.

Artichokes are one of my fave things! And with the avocado and on this toast, I would feast on these things :) pinned

Wow! I think I would probably end up just eating this with a spoon! So glad that avocados are coming down in price again here because I can’t wait to make this one very soon :) Thanks Marla!

YUM! This looks divine. I don’t see artichokes listed in the instructions – I assume they are diced and added to the smashed avocado?
