I pin brownies & bars like every second of my life.
Funny thing is though I have never posted brownies here on MarlaMeridith.com until today. These beauties are from the amazing new cookbook by Elana Amsterdam…Paleo Cooking from Elana’s Pantry: Gluten Free, Grain Free, Dairy Free Recipes.
They are bursting with chocolate & you will definitely not miss the flour.
What could be more pleasant than a crumbly square filled with chocolate?
Not much I am certain.
Elana’s latest book is a lovely welcome into the world of Paleo cooking…
…if you have not dabbled in it all ready.
Also, it is a wonderful cookbook & resource for folks who have followed this diet for some time.
Please visit her blog Elana’s Pantry too…an astounding array of gluten-free recipes awaits.
What makes these brownies unique (different from other grain free recipes) is that it doesn’t even have the blanched almond flour typically used.
By some kinda magic (I think it’s the eggs) these brownies rise perfectly & have a lovely crumbly texture.
This pan did not stick around long at all. Nope. We all fought over each & every crumb.
What does that mean? I need to make more really soon. Like today.
Some other recipes that caught my eye are (there are nearly 100 recipes so it is hard to choose favorites!)
- Bacon Tart
- Blueberry Coffee Cake
- Breakfast Sausages
- Olive Oil Thyme Crackers
- Sesame Noodles
Hopefully you can get yourself a copy of this cookbook really soon…you will be pleased when you do.

These sounds fantastic! I have a gluten-free friend who would go crazy for these.
P.S. Where do you find coconut sugar?
Hello, I buy my coconut sugar at Costco.
Those look good and I like the sound of flourless!

Looks Delish!! I have never heard of Coconut Sugar. Where can I find this?
Depending on where you are you can find it at whole foods. I’ve also seen it at tj maxx/winners/home goods/home sense. Hope that helps!! 🙂

This is a fraud. Elana would never have a recipe with vegetable shortening in it for Paleos. Omega 6 oils in vegetable oils are not healthy.
These brownies are absolutely gawdgeous!! Elana has amazing recipes.

Who won?
mmmm.. I am not sure about the coconut sugar!!! is it like raw sugar, because thats what i use regularly
Oh my! These brownies look glorious 🙂 really have to try this recipe
Why thank ya! Hopefully you can try ’em real soon 🙂
Is there something I can use in place of coconut sugar? I’ve never heard if it and not sure where to find. I also don’t like to buy specialty ingredients that I have no other use for… (I’m not into paleo, but these still look yummy, and I can share with my paleo-following friends.)
Try some maple syrup or honey….let me know how that works out 🙂
the only sub i made was butter otherwise i used the exact amounts of everything, they did not crackle at all but they taste good.
This looks amazing! 🙂
Hey Marla 🙂 I just wanted to say thank you for the recipe. We made them tonight as a first bake for my new mixer (I got my first ever KitchenAid mixer!!) and they were amazing! I used coconut oil instead and my crackle was gorgeous just like your photos :). Loved these; they’re on their way to almost finished already!
Oh yay! So glad these brownies worked out for you guys. Now I crave ’em 😉 Congrats on your new mixer!
JUST made these and and and they are AMAZING. omg *munch munch*… Thank you so much!!!!
I also drizzled some walnut crumbles halfway through baking and OMG nOM!
I just mixed these and they’re in the oven now. Seemed like a lot of eggs! Substituted coconut oil for shortening.
Yum, great recipe! Do you think I could use coconut oil instead of shortening? I am not Paleo just trying to eat healthy, Thanks!
Go ahead & try it! Let us know how your brownies turn out 🙂
calories???? Nutritional facts? They look delish! Thanks
