Cookies= Happy, yes? Recently I saw a movie simply titled Happy at the Mountain Film festival in Telluride. Can you say the word happy without smiling? Go ahead and try it. I bet a grin will grace your lips. This movie was very important. It focused on finding universal truths. Wonderful things that make us embrace life, giggle and grin. This sweet film took home many awards, not surprising really. My cookie post is the first in a series that will cover stuff that makes me happy. Happiness is catching – my goal is to spread joy and I hope you have fun joining me on this ride.
It is freeing to be happy isn’t it?
First up in my happy series is Cookies. They make me grin. Especially healthy ones that taste amazing. Raise your hand if you don’t like these baked goodies….
Let’s start with breakfast. Gluten Free Lemon Ricotta Breakfast Cookies always brighten our day.
Apple Oatmeal Breakfast Cookies are great for when you have to dash out the door. Also enjoyed while relaxing with a big cup of steamy coffee or cold milk.
I bet each and everyone of you has some kind of crumbly cookie you adore. Whether it is a favorite one your grandmother or mom used to make. Or one in which you devour the dough before you set ’em in the oven. I bet you can find some sort of cookie that makes you smile.
Strawberry Cream Cheese Whoopie Pies have the added bonus of a frosting tucked in the middle.
Cranberry Pumpkin Ricotta Cookies are great all year round. The time is always right for pumpkin over here!
Skinny Chocolate Drop Cookies are super fun. They have a secret ingredient. What is that you ask? The dough is made from Ezekiel bread crumbs.
For those of you who are on a raw food diet, or you don’t want that oven on this summer here are some of our favorite no bake cookies. Chocolate Peanut Butter.
Cream cheese adds a nice flavor & texture twist to these Chocolate Cream Cheese Cookies.

I love all kinds of cookies!! Last night at a BBQ a couple brought cookies from The Fresh Market. It was a white chocolate cranberry oatmeal cookie, delicious. Of course chocolate chip is probably my favorite and I like those big and chewy with a little crisp.

See, I am all about anything I dont have to turn the oven on for AND that I can make with my 1 beloved appliance, you guessed it, the Vita. I dont even own a kitchen aid stand mixer but that’s what I wanna get next 🙂

Aggie, I love shortbread too. When I was a kid I used to crave those giant tins of butter/shortbread cookies. There were like 12 different shapes. Each one addictive, especially the ones with the coarse sugar on top. Love your happy blog too!

Heather it is soooo fun when our kids can help us in the kitchen. Cookies are so easy too as the method is simple. Nothing can really mess ’em up. The biggest bonus is eating them during & after baking 🙂 My kids are all about licking all the spoons from the batter.
