Huevos Rancheros

What’s your favorite way to serve up eggs? I’ve always loved Huevos Rancheros and even more so after the Carnival cruise I went on recently….While on board the ship I enjoyed Huevos Rancheros as often as I could. This recipe can easily be adapted with any veggies & proteins you like!

Isn’t that blue water gorgeous?!

Below is a photo of the eggs I enjoyed on the cruise…..I told ya. They were amazing! Seasoned perfectly with Mexican spices & fresh pico de gallo. They used pinto beans & served the dish with a few delicious salsas. One of my favorites was a smoky chipotle sauce.

After I had this for brunch on the ship, I would lie out on the decks and enjoy the bright sunshine & the blue Caribbean Sea. It was the ultimate way to unwind & relax!

What could be better than runny, drippy eggs…..

All you need to do is season & heat up some black beans. Top them with some fresh tomato & avocado salad. Then that runny, drippy egg!

Top that with feta, goat or queso cheese & sliced green onion.

  1. This looks awesome Marla! And nothing is better than runny, drippy eggs! That second image, omg love it!! You captured it beautifully! You make perfect eggs, btw! And the beans and avocado – love! pinned 🙂

  2. Homemade huevos rancheros have been on my to-do list for awhile, but seriously? I think it just got pushed to the tippy-top. This looks absolutely phenomenal with the perfectly-cooked eggs and all those fun toppings! Need these this weekend! 🙂 Pinned.

    1. Thanks for noting the rebranding….this is a huge work in progress! Gonna take a good amount of time to make all the changes we have planned. I agree, red is way more my color!! xx

  3. Instead of black beans, use pinto. Instead of olive oil, use a bit of lard. The latter is not as healthy, but it give the huevos rancheros an authentic, Mexican, not Tex Mex, flavor
