I’ll never forget the first time I saw an Ice Cream Baked Potato OMG. It was night time, the lights were dimmed & this was presented to the table at Cowgirl restaurant in NYC’s West Village. We ohhh’d, ahhh’d, examined it. Then dove in to all the deliciousness. Let’s say the baked potato became a sweet memory moments after it touched the table.
Sometimes the sweetest treats leave the fondest memories. I used to live in NYC and going to Cowgirl was always an adventure. I loved everything about it. The western decor, hip cowgirl & cowboy servers & of course the food! I’ve not been in years & I’m thinking its time to saddle up and go back.
It makes sense that I felt at home there…little did I know that one day I would end up in Telluride, CO. Home of mountaineers, rustic luxe design, ranchers & cowboys! These baked potatoes are super simple to make & they would be the perfect addition to your summer entertaining. Kids and adults love this dessert! The other great thing is you won’t ever need to turn on your oven to make this…gotta love that in the summer time!
