No matter what your answer, nows your time to cook up this fantastic Jewish dish for Passover or any time at all! I remember as a kid loving when my grandma & mom would cook up this dish for breakfast. It can be prepared as a scramble, frittata or patties. Sweet & savory options are both fantastic. So how do you turn a stiff sheet of matzo into a pancake anyway? You break the matzo up into pieces & soak it in warm water or milk for a few minutes. You then press the liquid out with your hands (as much as you can) and either fry this mixture up as a scramble or shape into patties. With maple & cinnamon this matzo brei tastes like a combo of scramble meets pancakes meets french toast. Serve with fresh berries, orange slices & Homemade Whipped Cream.
