I’m just back from NYC (for TV segments) & life is moving at warp speed. I was in the city for 24 hours then it was straight back to the high-country. I love it here so much, I don’t like to be gone for long. There’s no choice but to hit the ground running as soon as the plane lands.
Last night I was on my way off to a dance performance back home, here in Telluride. I had to get a tasty, healthy dinner on the table for my family. Not to mention, who doesn’t come home starving after a dance rehearsal?!
This hearty, comfort food casserole is all we need to fuel up. The ground beef topping adds lots of protein & sustain to homemade mac ‘n cheese. By the way…it’s so easy to make your own cheesy sauce. No need for those store bought packets!
