Hi there! Ok, you don’t need to tell me these aren’t my prettiest food photos. I all ready know that. I needed to get this PB&J Enchilada French Toast on the breakfast table asap.

What makes this breakfast/brunch/snack so fabulous?
Easy. Take a whole wheat tortilla, spread on some peanut butter & jelly. Roll it up. Dip in whisked egg. Fry up in butter. Really, nothing is better. Not to mention this is protein & energy packed. Enjoy any time of the day & serve with eggs for a little something more. We pack these for lunchbox snacks too!
