There’s nothing like kicking off the week with a big noodley stir fry!
We are off to a big & busy week at the MM headquarters! I’m preparing for a quick trip to NYC at the end of the week for an NBC segment (more on that soon) and I’m making sure that my family will have all kinds of grab & go meals at the ready. My kids LOVE Pad Thai when we go to our favorite restaurant Siam Telluride, so I figured this would be a meal to remember while I’m in NY.
Pad Thai is super quick to prepare. Once you have the ingredients in the house you can throw it together at any time. I use shrimp here, but you can use pork, chicken, beef or keep it vegetarian. All great options!
As you can see, I like to add a runny egg on the top of the dish…it adds to the delicious experience & is worth the few seconds it takes to make it!

Yes! “Restaurant” cooking at home is the BEST!!!!
All the flavors with the peanut oil, sriracha, coconut milk, honey, tamarind….so good! I could never get sick of those flavors! Love making ‘restaurant’ food at home so you can get it just the way you want it!
