Pumpkin has been my whole world lately. This time of year has me jazzed to use my favorite ingredient in everything! We adore this orange beauty in sweets, savories and everything in between. There is nothing like starting the day with hearty steel cuts oats in this Pumpkin Breakfast Bake with Streusel Topping.

I wish I had this breakfast bake to wake up to! A perfect breakfast!
Thanks Laura! Maybe you can make a Pumpkin Breakfast Bake this weekend?
Ok guess what I have coming Monday morning…an overnight pumpkin breakfast bake. Just telling you now…lol I’ve had it sitting in my drafts for a month and figure I better post it before pumpkin season is over.
And yours is of course, beautiful!
I know it Averie, we need to catch the seasons while we can. Not sure what i’ll do with myself once pumpkin season is over 😉
What a great breakfast idea, heading over to check out the recipe now!
Thanks Kathryn, hope you get to try it soon!

Mmm..this sounds like such a yummy breakfast!
Oh, Marla…between your love of pumpkin and applesauce I might a girl crush on you. As always, it looks awesome! I have some steel cut oatmeal I’ve been looking to use up, too!
Ha! Thanks 🙂 Girl crushes are A.OK! Enjoy 🙂
Oh I need to make this this weekend. Sounds fabulous and I love those kiwi berries too!
Thanks Marina! I love the color and flavor of those kiwi berries. Even though they don’t scream fall 😉
Looks absolutely delicious! My kind of breakfast 🙂
Well, I know what I am having for breakfast this weekend! Pumpkin is one of my favorite flavors and ingredients too.
Hope you get to enjoy this breakfast bake this weekend ~ the bonus is how much leftovers you will have for the busy week ahead. ALWAYS a BIG bonus in my book 😉
Healthy AND delicious (looking)! 🙂
Marla, anything with streusel just vanishes at my house. My teens would go crazy if they would wake up to such a breakfast streusel treat. (Maybe that would eliminate the teen moodiness, too). 🙂
I agree with you Kirsten, there is a certain kind of magic in a streusel topping. A little crisp, crunch and sweetness is undeniably happy food. Anything to cut down on teenage moodiness would be a great bonus! Hopefully this works out for you 😉
Ooo…this is my kind of breakfast. Steel cut oats? check. Fresh fruit? check. Deliciously wholesome? check. Thanks for sharing!
Hi Brianna, glad I could share a breakfast recipe that fits all those essential requirements! Hope you can enjoy some soon 🙂
This is really such a healthy breakfast. And sounding so delicious. 😀
Just beautiful Marla, going to check out the recipe now!
Marla you never disappoint. I’m on the pumpkin train too, diving headlong into the season. I love the idea of incorporating it for breakfast and will hop over to Attune next. I need to say how much I love visiting your blog visually. It is such a warm, welcoming, vibrant place. If it were a house, I’d move in gladly!
Hi Toni! Glad to hear you have the same pumpkin obsession!
This will be one of my weekend taste testers, it looks so good, good for you, and filling! I cant wait to treat my tastebuds.
I love anything with pumpkin and this sounds yummy! I’m headed over to check it out.
What a pretty way to start the day off!
looks fab, Marla!
Love this! Looks beautiful, and I love any breakfast with pumpkin! YUM!
We’re a month into fall and I still cannot get enough pumpkin. What a gorgeous, healthy breakfast!
Looks so good! I love easy breakfasts that you can eat all week.
Looks like a good, hearty breakfast
I was looking for something to make for my mother who loves pumpkin pie and really anything that has pumpkin in it. I think she will LOVE this! I am going to give it a try this weekend and if all goes well, I will make it for her next time I visit.
