This is a great alternative for people on gluten free and grain free diets. It is also great for people like me who just happen to love quinoa.

To make things even more pretty add some apple slices and fresh or dried cranberries.

I actually prefer the fresh cranberries even though they are crazy tart. Most folks prefer the sweet dried ones though.

Plan accordingly & expect people other than me to pull off the tart ones.

I also have a fun breakfast/brunch quinoa bake you should try ~ it too has sweet potatoes in it Quinoa Sweet Potato Breakfast Bake.

  1. Do you love the tart cranberries more because of what they bring to your glorious pics ; ) I do! This is such a healthy take on a classic – and so adaptable. Thanks for sharing.

  2. Beautiful dish! I, too, love quinoa.

In your recipe, the pinch of cinnamon was put down twice. I see in the instruction that the other ingredient should be ginger.

  3. This stuffing turned out so delicious! I made it for my friends and they all loved the twist. I also roasted some fresh cranberries along with the sweet potatoes and apples. That added a hint of tart sweetness to the mix. Thank you for the recipe!

  4. absolutely beautiful! I’m at sister’s house for Thanksgiving. I inspired to make this today as a surprise. By any chance do you have a calorie count or nutritional breakdown? Happy Thanksgiving!

  5. Hi! I am thinking of making this at Thanksgiving, but I know the oven will probably be packed with other goodies. What do you think of preparing the sweet potatoes, apples and onions earlier, like the day before and then stirring them into the quinoa day of? I know I would need to heat them a bit, but… What are your thoughts?

  6. I love all of the bright colors. I would have never thought of having stuffing with quinoa. Thanks for sharing this idea.
