Cheesy Bacon Apple Frittata

All together in one happy frittata. The apples add a little sweet with the savory. A winning combo. With school ending soon and the weather heating up we want lots of protein to burn. Nothing like a serving of eggs to jumpstart your morning...or any time.

 3 slices nitrate free Turkey Bacon (you can also use pork bacon)
 1 tablespoon Butter
 1 medium sized Apple, diced very small (I like Honey Crisp, Pink Lady or Gala apples)
 a pinch of Sea Salt
 a pinch of ground Cinnamon
 4 large organic Eggs
 1/2 cup Egg Whites
 1/2 cup fat free Ricotta Cheese
 1/4 cup (2 ounces) grated Cheese (I like sharp Cheddar, use your favorite)

Cook bacon according to package directions in a oven safe skillet. I use my 10 inch cast iron pan. Remove bacon from pan and keep residual grease in the pan. Let bacon cool a bit and then dice into small pieces. Heat pan over medium high heat, add the butter, apple, salt and cinnamon. Sauté apples for about 6-8 minutes until softened and fragrant, stir occasionally and reduce heat if needed. Add diced bacon back into pan. Stir to combine. Reduce heat to medium make sure the mixture is evenly distributed in the pan.

Pre-heat broiler with the rack in the middle. In a bowl whisk together eggs, stir in ricotta and 1 ounce of the grated cheese. Put eggs in pan with apples and bacon. Cook about 5 minutes until the eggs are mostly set and the edges begin to pull away from the sides of the pan. Top with remainder of the grated cheese. With an oven mitt, carefully bring your skillet to the oven and broil for about 2-3 minutes until the cheese is slightly browned and melted.

If you want to lighten this up a bit more you can use all egg whites. Remember that organic egg yolks are nutrition powerhouses.

You can make this vegetarian with meatless bacon
