My friends and family are always happy to be taste testers and they LOVED my Chipotle Lime Steak Kebabs with Cilantro Lime Rice recipes. We all agree that this would be the BEST menu to serve on July 4th!
'--Cilantro Lime Rice
Cook rice. Let it sit for about 10 minutes. Fluff with a fork.
Add the cilantro, water, garlic, lime juice and a splash of water to your blender. Season with salt & pepper to taste.
While you are cooking the rice...
Combine the oil, lime juice and seasonings with a whisk. Transfer to a gallon sized zip top plastic bag. Add the steak and veggies. Combine well & refrigerate for 1 hour. Thread the steak & veg onto skewers (if using wood be sure to soak first so they don’t burn) Discard the marinade. Grill over medium high heat for 6-8 minutes (depending on how well you like your steak) Serve with Cilantro Lime Rice.
